Hi Friends! Happy Wednesday!
Last weekend was a cooking fiesta here. I can’t tell you how glad I am to be back in the office today because being the cook, cleaner, eater, stylist and photographer is a lot of work! I really need to consider outsourcing a few things. Not the cooking though. That’s all me! I’m really in love my DSLR. I’ve actually had my eye on a new smaller one. Mine is big and bulky. It works at home, but not particularly good for taking places with me. I’m currently resisting the urge to buy this one.
One of the perks of living is Arizona is good light. The last few weekends have been abnormally cloudy and rainy. Not the best photography weather. So last weekend I took advantage of the sunshine and whipped up several recipes I’d been hoarding for a sunny day. If I’m gonna make a mess, I wanna make a really big one and get it over with. Cook once, clean once. Today I’m giving you a sneak peak into my kitchen. It’s only appropriate seeing as it’s What I Ate Wednesday so before we get to my real eats let’s see what’s been cooking in my kitchen.
Things started with a lot of greens because well, in case you hadn’t noticed summer is right around the corner. I don’t know about you but I know if I don’t start eating more of the green stuff I’m gonna look like Betty Boop in my swimsuit. This may help me eat more too.
To balance out the green, we need beans for protein. That’s right, these sweet things are made with chickpeas. This is a recipe redux of my chocolate chickpea blondies. I’m not sure I’m happy how these turned out. What do you think?
Remember when I said I would recreate this salad? Well…I did.
Round two of vegan protein bars were a failure. Three times a charm, right?
Then this deliciousness happened. #paleo

And after I work, I play.
I texted my Mom because this was our favorite store in Tucson. They just opened one a few blocks from my house and Lulu is opening next door. You know where I’ll be spending my money.
I may have gotten these shoes. Plantar fasciitis has been killing my good foot since Munich. I supinate on my left foot to make up for my shorter femur on the right. I wanted a stability shoe, but most I’ve tried in the past are hard as rocks. These are completely the opposite. They suction the mid-foot and hug the heel yet they’re so light and cushy like slippers.

Breakfast. Egg whites, leftover asparagus and a slice of turkey bacon.
Snack. Greek yogurt frozen trail mix bar with a side of photo editing. Maybe one of these days I’ll be able to shoot these without them melting.
Lunch. Leftover pineapple fish taco bowl.
Snack. Orange Julius.
Snack. Grain free carrot cake bite.
Dinner. Tuscan kale salad and a mahi burger.
