Welcome to Wednesday and the middle of the week. Let’s catch up on the happenings around here before we get to the food. Shall we?
Remember last week I was seeing the podiatrist after my PCP begged me to go? Well, I went. I actually like this doctor a lot. He tries to figure things. I stopped seeing him once I got sucked into the Mayo Clinic circus a few months ago. When the orthopedic there told me he wouldn’t help with my foot issue last month because “he’s a surgeon,” I gave up on going there and went back to the first doctor I saw when all this injury madness began.
After examining me, he said he thinks it could be the beginning of an ankle stress fracture. The plantar fasciitis is just a side effect of something else going on. What’s odd about my symptoms is I can run without pain, but I can’t walk. I’m not a heal striker so that’s probably why. He didn’t want to mess around given my history which is why he scheduled an MRI. We also talked about a bone simulator to reduce the healing time. I’ve been wearing the boot 3 weeks now and already last weekend had a major turnaround in the pain. I have very little pain which I’m so thankful for. I really can’t take anymore pain at this point. I know I’m not healed enough to be out of it yet, but it’s still a good sign. I’m sure glad I didn’t wait for a doctor to tell me to wear it this time.
As far as my workouts, I’m sticking to elliptical and swimming for now and still doing my strength training too. Especially focusing on my hip and ankle work to keep my weak areas strong. The doctor said I need to cycle in more swimming once I’m healed until my body gets used to full weight bearing again. Ugh…I can’t even begin to express what I’m feeling. Between this and my hormone issues, I’ve had enough.
Good thing I have cooking and photography to distract me. Speaking of which, let’s see some food because good food makes everything better! These are my eats from 4th of July. Breakfast. Scrambled eggs, peas and turkey bacon. I’ve been eating this on repeat lately. I swear you will love it. Peas and eggs equal bliss.
Lunch. Leftover shrimp salad from the day before.
Dinner. Organic turkey burger, broccoli, sweet potato and tomato watermelon salad.
Snack. Watermelon Pineapple Peach Sorbet. I could eat this all day. It’s been so hot and muggy in Phoenix with the monsoons. This was the perfect way to get nutrients and stay cool. Recipe will be up this Friday!
