Hi Friends!

Happy last Friday of July! Where has the summer gone? All I can is I’m glad it’s getting gone because fall is by far my favorite time of year. That means cooler weather is near and hopefully, that also means I will be able to get outdoors to walk and hike again. Crossing my fingers I’m fully healed by the time the temps change in November. Summer is the best time to be at the gym cross training for us Arizonans. It’s just too hot to be outdoors. Being at the gym for all my workouts with the cycle of injuries I’ve had has me going a bit insane. I’ve had to get very creative to keep myself from getting bored.

A few weeks ago, a friend asked why I wasn’t swimming in the mornings when she swam. I told her because it makes more sense to swim after my workout when I’m all sweaty then I can swim, wash my hair (which is a whole process in itself) and get ready for work. It never made sense to me how she could swim, shower then workout. To each their own.

Well, boredom led me to switch things up which meant swimming first. Now I’m really liking the new routine despite the whole showering annoyance (remind me to tell you about my shower stalker sometime). I’m strongest at my first workout of the day so my stroke has benefited a lot from switching things up. New routine before car accident was swim, lift weights (if it’s a weight day) and a little biking if I have time. Sometimes just changing the order in which you do things is enough of a change for your mind and body. It’s good thing I did switch up my routine too now that I’m down with a tibia fracture. I sure appreciate that it’s summer because I’d be indoors for my workouts due to the heat anyway.

What I also appreciate about summer is how it forces me to eat healthier. I eat healthy all the time, but something about warm weather forces me to eat even better. More fruit, more vegetables, more greens, more of all the good stuff. Summer foods seem easier too. Am I right? Winter foods feel like they take more work to prep and make. This 5 piece (6 if you count salt) salad couldn’t get any easier. You’d never imagine pairing tomato and watermelon, but trust me. You want to. The flavors bounce off each other and brighten with the balsamic and mint. Lighten up your last few weeks of summer with this decadent salad. P.S. this would be perfect for a BBQ or Labor Day party.

Tomato Balsamic Watermelon Salad

Combine a fresh tomato with sweet, juicy watermelon with mint and balsamic for a Tomato Balsamic Watermelon Salad that's the pure essence of summer.

Serves: 4
Ingredients
  • 2 large beefsteak tomatoes cut into quarters
  • 4 cups cubed & seeded watermelon
  • 1 tbsp chopped mint leaves
  • 4 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • sea salt to taste
Instructions
  1. In a small bowl, combine mint, oil & vinegar
  2. In a larger bowl, add watermelon & tomatoes
  3. Add dressing to salad
  4. Allow to marinade in the refrigerator 1 hour prior to serving
Notes
Serves ~4, 86 calories each

    Summer food is easier, less cooking overall 🙂 I would’ve gone with your original routine but mixing it up now and then is always good. Haven’t tried a salad like this and now I want to especially with the heat lately.

      I will probably go back to the original routine eventually, but now that I’m too hurt to do any other cardio it works for now.

    I think that summer food is, by its definition, all about ease. I definitely gravitate towards dishes and meals that are easy peasy!
    And GIRL you know I feel you about the showering process after swimming. But at least I don’t have a shower stalker. That is creepy!

    Summer food is so much easier – mainly because I think of summer food as fresh fruit and veggies and cold meals… in the winter I want something warm which usually includes cooking/re-heating etc.

    Loooove watermelon salads! Have you tried it with feta or cotija cheese? That bit of salt is awesome with the sweetness.

      You know my Mom & got a watermelon salad from a Greek restaurant this week and theirs had feta and cucumber on it. It was so delicious! I was thinking then how I should add feta to mine and it would be divine. Maybe I’ll do a redux next year with it.

    There’s nothing better than ripe summer tomatoes. My family used to have them in our garden along with fresh basil. This has inspired me to make eating more watermelon a priority!

    Summer food makes eating healthy so easy! The seasonal fruits and veggies are some of my all time favorites. I have to admit I was kinda surprised to see watermelon in this recipe but I bet the flavor combination is fabulous. Pinning for menu planning.
