Hope you had a great weekend. I miss you guys. I was in Colorado this weekend for Blend. It was a relaxing and fun weekend. Food, fitness, blogging, friends. That about sums it up! How can you get any better than that? It’s been a few years since I’ve been to Colorado and I forgot how how gorgeous it was! We stayed at Chautauqua Park in cottages nestled into the mountains with trails surrounding it. I was in heaven with the views and beauty. I love Colorado for the same reason I love Arizona. For it’s natural beauty. The trails and mountains were breathtaking. The cottages where we stayed were not really my style. When I’m away from home, I like to be pampered. Hey, what can I say? I felt like I was at my Grandma’s house and camping at the same time. This girl’s not a camping kinda girl. She’s a luxury girl. I know that sounds strange for someone who loves climbing mountain trails and being outdoors. Apparently I just like to workout and walk around outdoors. What can I say? I’m a diva about some things. A girl must have her standards!
This weekend was a much needed break for me. I’ve been feeling sluggish lately. When I’m away from home like this, I always think how awesome it is to have so much free time. My weekends are packed with “catching up.” You know, running errands, doing laundry, cooking, cleaning, etc. All the stuff you don’t have time to do when you have a 9 to 5er. Lately, I wake up Saturday morning cherishing the weekend freedom then suddenly it’s Sunday night and I have no idea where my weekend went. What happened to the days of relaxing and doing nothing all weekend long? I miss those days. This weekend I even took a break from fitness. There wasn’t a gym at Grandma’s house, but it was a very active weekend with a boot camp, yoga, hiking and tons of walking. It was nice letting my body detox from fitness a few days. The mini break was just what the doctor ordered! Not to mention, it was fun seeing old friends and meeting new ones too.
These blogging events remind me how many truly amazing women are out there. As a matter of fact, I’ve never met a blogger who didn’t inspire or amaze me. There’s just something special about people who blog and I’m not saying that either because I blog. Everyone has a unique story that draws you to them. Last week a blogger posted the bloggers she was most excited to meet and I was one of them. It surprised me that someone wold say I inspire them. I feel my inspiration mojo was robbed with my injuries last year. Attending Blend this weekend, reminded that you don’t have to be rich, famous, skinny or beautiful to inspire others. You just have to be you. Being authentic and real draws people to you. When you open yourself up by sharing your insecurities, it sends the message that you’re willing to make yourself vulnerable to help others. A very selfless thing.
And with those Monday thoughts, I have a very yummy recipe to share with you today! I’ve been slacking on my protein these days so I’m getting creative in the kitchen to fix that. Quinoa is a great source of protein and it’s plant based too. You can certainly substitute the quinoa flakes for oats if you’re not a quinoa fan and they would be equally delicious. These bites are subtly and naturally sweetened which I love because everything seems to be on sugar overload these days. Not only are they light, they taste healthy and delicious. Hope you love them!

Oh and on a completely unrelated note, did anyone watch the Bruce Jenner two night special episode last night? I’m bummed I missed it last night. I’m sure E! will replay it a thousand times this week because they don’t play anything except the Kardashians. Tell me what happened!!!
- 1½ cups quinoa flakes
- 1½ tsp cinnamon
- 12 dates, pitted
- 2 tbsp coconut oil
- 2 tbsp chia seeds
- 2 tbsp hemp seed hearts
- Soak dates in a warm bowl of water for 20 minutes
- To your food processor, add all ingredients & pulse until a course dough forms
- Form dough into balls adding water to stick together as needed*
- Refrigerate on a plate or in a tupperware container overnight to set
*This will be a loose mixture, as you form into balls you will need to add water to the dough to roll into balls. Rest assured they will set after refrigeration
