Stir Fry Scrambled Eggs {GF, Paleo, Low Cal}

Next to fish, eggs are my favorite protein. Not only are they packed with a ton of protein and healthy vitamins, they’re also make almost anything look pretty you put them into. I just love ’em. If I didn’t have such a crappy commute to and from work everyday, I would eat them every night for dinner and for breakfast too.

Thanks to Phoenix traffic and terrible drivers, I’m lucky if I get home by 7pm. Seriously, I don’t know where people here learned to drive. I’ve traveled all over and I would say Phoenix drivers are about as crazy as China and Mexico. There are no rules and you go at any speed you want. I feel like I’m on an Indy Race track every day to and from work.

Stir Fry Scrambled Eggs

Just to give you an idea. You have to keep your bumper as close to the bumper of the person in front of you otherwise if you leave any inch of space someone will cut you off to get in and you’re breaking every two seconds. People here are lane jumpers. They think they’re getting ahead of traffic by switching lanes, but they’re making it worse by forcing everyone behind them to slam on their brakes. It’s like stopping a train, starting a train. It takes FOREVER to get it going again. For me with my foot issues, the constant breaking puts a ton of extra strain on my foot. I’m usually in a lot of pain from the constant stop and go by the time the drive is over. 

My favorite trick is instead of using the right turn lane people race in the middle lane and at the last second, right before the light cut in front of everyone and turn right. Everyone in the right lane has to slam on their brakes while the royal rude ragers bud in. I’ve never seen that anywhere. Not even Mexico or China.

And blinkers. No one has them. They don’t exist here. I guess we ran out of blinker fluid in the desert. You practically have to be a mind reader to know when someone is turning. And when people actually do use their blinkers, it throws everyone else off and they rear end you. Go figure. I’m not sure why manufacturers even bother putting them in cars anymore. Just saying…. 

Stir Fry Scrambled Eggs

Sometimes I think I would be safer hiking the Grand Canyon alone then commuting to and from work every day. Arizona is a state of transplants. Almost no one is actually from Arizona. People are from other places, usually very cold ones. I have no idea how they ever survived a winter with these driving skills either. 

Now that you have the low down on the Phoenix traffic, here’s the Stir Fry Scrambled Eggs recipe you’ve been so patiently waiting for! Delicious mix of breakfast and dinner flavors all stir fried & scrambled into one delicious and healthy dish. Any volunteers to come over and make it for me while I make the long and dangerous hike home? 

Stir Fry Scrambled Eggs

Serves: 4
Ingredients
  • 12 egg whites
  • 1 cup chopped green bell pepper
  • ½ cup chopped yellow & orange bell peppers
  • ½ cup chopped red bell pepper
  • 3 tbsp rice wine vinegar
  • 1 tsp garlic powder
  • ½ tsp ground ginger
  • 1 tsp thyme
  • salt & pepper to taste
Instructions
  1. Spray skillet with cooking spray & heat to medium heat on stovetop
  2. Add bell peppers and rice wine vinegar
  3. Saute until bell peppers are softened a bit
  4. Add egg whites and seasonings to skillet
  5. Stir ingredients frequently (otherwise you will have an omelette) until eggs are cooked thoroughly

    I think I would have a heart attack driving in Phoenix haha! Things are much more milder here (most people use blinkers, relaxed, etc), so I can’t even imagine how stressful it must be just trying to drive around!

    Anyway, EGGS! Love them and how you incorporated them into a stir fry! The more ways you can eat them, the better!

    I bet most of those drivers came from New York lol. It’s like every man (or woman I guess) for themselves on the roads here!

    Always looking for great egg recipes. I also like eggs and eat quite a bit throughout the week. I should change to egg whites but just can’t seem to make the change just yet.
