I think I’m having the winter blahs which is weird because I live in the hottest and sunniest place on earth. But lately I’ve been feeling incredibly unmotivated yet totally overwhelmed at the same time. Make sense? Yeah, not to me either. I think I’m still adjusting to the newness of everything I’m doing in my life this year. It’s only two weeks into nutrition school and I feel like sponge wanting to absorb more. I find myself reading chapters ahead in bed at night because it’s all so interesting! Without a doubt, I’ve made the right decision and am in the right place for right now even if it is scary and unknown.
Mom also left two weeks ago which may have something to do with my blah feeling; the reality of everything is setting in I guess. She was here on and off since the car accident last July. It feels like a huge chapter of my life has closed and maybe to some extent I’m mourning that loss. Strange to mourn something so awful. When she left, she told me “have a little faith” and then I jammed out like George Michael. Kidding! Now when I’m feeling overwhelmed or scattered (like I do everyday haha) I remind myself that sometimes you have to have a little faith.
Now that we’ve got the heavy stuff out of the way, it’s Wednesday so let’s see what I’ve been eating! These are my eats from last Saturday, a very scattered day with somehow the most perfect eats. It’s fun to see what other people eat in a day and also great motivation for me to eat balanced and create more delicious recipes for you!
Breakfast. Veggie omelette with 1/2 cup of red and yellow bell peppers, 1 cup of spinach, plantains fried in coconut oil and an Applegate chicken apple sausage. I want those plantains every day.
Snack. Emerald raw almonds. I love these!
Lunch. My go-to steamed broccoli and tuna “salad” with mustard.
Black bean hummus without tahini with raw broccoli and cauliflower. P.S. that hummus is my most pinned recipe. Pin it!
A spoonful of Trader Joe’s peanut butter with flax and chia. Have you tried this? It’s pretty awesome!
Dinner. A new recipe I’ve been working on, Chicken Pho with zoodles from the crockpot. Since I was forced to eat gluten free due to my gluten intolerance, pho is probably the meal I miss most. The struggle is real so I’ve making my own noodle-less version and I finally got it just right. I feel so cool eating with chopsticks at home.
Snack. Just a sliced orange.

Right now, I’m having to have a lot of faith: job, running, baby., health. I try not to let it get me down, but this week the boredom is setting in, as well as that feeling of really not knowing what is going to happen next, aside from a colonoscopy next week. But I’m so happy for you that you love what you are studying–that is a great sign.
And yes, chopsticks at home, of course!
I have plenty of work I can outsource to you! A zillion photos need editing and I need someone to study for my CPT for me…hehe!
Unfortunately I’m one of those people who cannot use chopsticks no matter how many times I am taught, otherwise I would definitely be eating with them at home! I love plantains fried in coconut oil – so tasty! I also love that Trader Joe’s peanut butter 🙂
There are some foods I can’t use them with either like rice. I have no to do it with something so small!
My favorite peanut butter! I eat it every day (several times a day lol)
I can’t believe what a good price it is too. A lot less expensive than almond butter!

GIrl faith is the only thing that fuels me most days. Being in charge of making enough money to pay the bills is SO FREAKING SCARY! But the alternative (being unfulfilled at work) just sounds so much worse. I had a breakdown on Friday, I’m sure its the first of many but I realized I was running away from my greatness because I’m scared. I need to make Dave some Pho, can’t wait for your recipe!
Oh girl! I’m sorry to hear that. Life certainly has it ups and downs. Even if you were in a stable income job, you would still have ups and downs, just different ones. I know it’s hard, but I also know it will get better. You’re strong and you will persevere! I’m here for you. xoxo
Our breakfasts are starting to look similar! And the orange 🙂 I can completely relate to feeling unmotivated and overwhelmed at the same time because I feel that way right now. I think it’s because we fill our plate with a lot, all good things, and then just struggle to meet our standards and judge ourselves. Or maybe that’s just me 🙂 Either way I relate!

Faith is so essential to life, and I don’t know where I’d be without it. Thankful that God gives me faith for each new step in life. And your eats look good. That soup looks pretty tasty.

your plaintains look wonderful! i made them once and sadly they came out so boring and tasteless… i had to douse them in maple syrup to eat them HAH! any advice?
sorry to hear about your winter blahs. I get down like that sometimes and it lasts for like a week before i go see some friends and pick right back up. Hope it goes away quickly for you 🙂
Oh no! How did you make them? I let mine ripen to yellow. They should be almost mushy like a banana. Then I slice and fry in a bit coconut oil until lightly golden on each side. They get plump and gorgeous and oh my, now I want some!

Your soup looks lovely, but – pho I’ve had in the Vietnamese restaurants here in New York has all been made with rice noodles. It’s one of the dishes I know I will be able to make for myself, without adaptation, now that I don’t eat gluten!
Yeah, I’ve been avoiding rice as well as a lot of other foods for my intolerances. A lot of sauces also have gluten in them and given how bad my antibodies are it’s not worth risking it right now.
Have you tried mung bean noodles? I’ve been loving them lately! A super delicious grain-free alternative to rice noodles.

I’m glad that you’re enjoying school so much even though it can be a daunting thing. I always have to remember to just keep moving forward and putting one foot in front of the other and I always eventually come out on the other side. You got this guuuurrrrrl.

That pho looks amazing. I need to take Vegas to the Asian section for a :real” bow. I can’t believe she’s never had it. Have you tried it with kelp noodles? I used to love those.
