With that said another weekend is upon us and one of the healthy things I do for myself over the weekend is prep my meals and snacks for the week. Making a meal and cleaning up can take anywhere from 30-90 minutes depending on the complexity. During the week, there’s just no way I’m willing to do that. In fact, the last thing I wanna do when I get home is cook. That might surprise you guys with all the recipes I post but truth be told I don’t like to be bothered with it during the week.
No thinking is what I’m all about during the week. I’m usually too burnt out from work to see straight much less think. I wanna come home, have something waiting for me in the fridge or freezer, ready to go. And since I’m being honest here, I’ll admit I simply hate making a mess. Nothing stresses me out more than a messy kitchen, dirty dishes everywhere and a counter with dried up muck on it. My way of dealing with that is making the mess one time. So on the weekend I make a big ‘ole mess and only have to clean it up once. Call me lazy. I call it efficient.
That’s why I love no bake snacks. It requires very little mess and virtually no work. Toss all ingredients together in a bowl or food processor (depending on what your making), set in a baking dish over parchment paper (best invention ever), put in the fridge for a couple hours and voila you have magic snacks. It’s efficient, it’s healthier than a store bought snack and it’s delicious. And these mighty raspberry bars are all of the above.
You can use any nut butter to make these. I used the original NuttZo flavor for these, but I’ve also made them with almond butter and they’re equally as good. I bet the chocolate nut butter would be delicious in these with the raspberries. Anything chocolate and raspberries is a win-win in my book. - ½ cup NuttZo or any nut butter
- ¼ cup light honey
- 1 cup GF rolled oats
- ¼ cup golden flax meal
- 1 tbsp chia seeds
- ½ cup raspberries
- In a bowl, melt honey & nut butter in the microwave 30 seconds
- Add remaining ingredients to the bowl & combine
- Line a square baking dish with parchment paper
- Add mixture and press & flatten using fingers into corners
- Set in the fridge 3 hours
- Remove & cute into bars
- Store in a container in the freezer for up to 1 week
