Spring into summer with this dreamy almond coconut smoothie! Made with Almond Breeze, raspberries and bananas and topped with coconut for pizzaz, this vibrant smoothie will be on blender repeat for months to come.

Oh friends, do I have an awesome spring into summer smoothie for you! My friends at Blue Diamond sent over their Almond Breeze Unsweetened Almond Coconut Milk to try. Lucky for you, I whipped up something special for you today!

I’m sure you know my love of almond milk from all my recipes. It’s a staple in every single one of them. I’m always looking for ways to get more calcium in my diet to protect my fragile bones. We all know the last thing I need are more injuries. Almond milk has been my drink of choice for years. Did you know it has 50% more calcium than regular milk? Why take a pill, when you can drink your vitamins! This Almond Breeze flavor, I particularly love. The hint of coconut ever so slightly sweetens the milk to make it perfection. Add a whole lot of raspberries (no skimping allowed), a couple bananas, a dash of shredded coconut and you got yourself a pretty in pink smoothie to dance your way into summer. Enjoy!

Spring into summer with this dreamy almond coconut smoothie! Made with Almond Breeze, raspberries and bananas and topped with coconut for pizzaz, this vibrant smoothie will be on blender repeat for months to come.

Ingredients
  • 2 cups raspberries frozen, I buy mine fresh & freeze them but any frozen kind will work
  • 2 ripe bananas frozen
  • 1½ cups Unsweetened Almond Breeze Almond Coconut Milk
  • 4 tbsp unsweetened shredded coconut*
  • 1 tbsp chia seeds
Instructions
  1. Add ingredients to a blender & combine
  2. Add to a mason jar & enjoy!
Notes
Makes 2 smoothies, 270 calories each
*For a lower calorie version, replace the coconut with stevia for a 200 calorie version

    I love smoothies! This looks awesome. How many raspberries? I assume two cups, not just two. I came across and awesome addition to smoothies a few months ago called Blendfresh. Fresh dried red fruits and veggies you can add for more nutrition. Check it out if you wish! Looking forward to making this smoothie!
