Happy Wednesday Friends!
This is a strange time of year in Arizona. You crave comforting fall foods, yet it’s a thousand degrees outside and you need a smoothie to cool off. Yeah, it’s hot, but hopefully, only for a few more weeks then it will cool enough to be outside again. Thankfully, I’m not leaving the house much these days because I’m wearing a lot of layers. My day looks a lot like this. My knee doesn’t do well bent in a chair for too long so couch is where the party’s at.
You may also notice I’m sporting the infamous boot again. That darn tear in my left foot is hurting like crazy. The inserts I bought last month helped for awhile, but now that I’ve been on crutches two months putting all my weight on that foot, the foot’s just over it. Honestly, I am too. I’ve had this pain since I was in Munich in April. I swear it’s the boot that never ends. I feel like it will be attached to my foot the rest of my life. It’s a lot of fun too when the velcro on the boot gets caught on the velcro on the knee brace and I’m all tangled up with myself. Definitely gonna attract a hot man with all this going on, but that’s a topic for another day!
With that excitement, let’s checkout what I’ve been eating! These are from meatless Monday. If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. It’s fun to see what other people eat in a day. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Egg whites, turkey bacon & an apple cinnamon Greek yogurt pancake minus the apples because I ate them all so I substituted blueberries. Something about caramelized apples is irresistible!
Lunch. No Bean Pumpkin Hummus with gluten free crackers, bell pepper and celery. I forgot how much I love this hummus. I could slather it on everything I eat. No pumpkin flavor whatsoever.
Dinner. Smoky black bean chili (similar to this one).

Snack. Skinny Pineapple Smoothie. A smoothie is a nice late night snack instead of diving into something salty or chocolaty. This smoothie was a mistake that turned out so very good. I meant to make a strawberry frappuccino, but somehow put pineapple in the blender instead. I blame the concussion.
