As promised, I'm continuing with the pumpkin theme. It's Week of Fall Pumpkin Recipes!
I swear I've become my mother. I can't tell you how many times in my life I secretly thought to myself "I will never be like my mother."
Like for instance, collecting a zillion pumpkins and decorating my house with them. I actually realized this when I was at the market the other day admiring all the different colors & shapes of pumpkins and felt like I just had to buy them.
I wasn't planning to eat them and I'm not planning on having a Halloween party. I'm the only one who's gonna see them. Who knows why I felt the need to laden my house with them. I guess part of getting older is becoming what you know and who would you know better than your mother?
Thank goodness it's too hot in Arizona to put them outside otherwise my neighbors might think I had a pumpkin patch in my backyard, which considering how much pumpkin I've been eating lately that may be an idea for next year. Now that I've admitted to you that I'm old and like my mother baha...let's chat about these lovely pumpkin bites!
At first, I made these Pumpkin Almond Joy Bites to bring with me to Tucson last weekend. For some reason I thought bringing male friends bites was more manly than muffins. I'm not sure why I thought that all the men at work love my muffins.
In any case, I didn't have to worry about it because they didn't end up surviving until the end of the week to make the trip with me. I'm glad I had these to munch on too. Last week I worked out a ton and didn't have a lot of food prepped at home. That is not like me, but when I'm not working I'm off my routine.
The thing I love about bites is just how easy they are to make. I actually don't know why I don't make them more? All you do is toss everything in a food processor and roll to your hearts content and in less than five minutes you can have yourself a healthy and processed gunk free snack.
And did I mention delicious too? The fact that these have pumpkin in them already makes them sound delicious, but you guys they really are unbelievable.
These bites are dense yet incredibly filling. They're not sweet at all. I used stevia to sweeten them just ever so slightly. You could always add a tablespoon of maple syrup or honey if you like them sweeter.
You may need to adjust the dry ingredients if you do that. But I truly love how wholesome they taste without the sugar. These are like biting into a taste of health. Hope you enjoy them!
Pumpkin Almond Joy Bites
Ingredients
- 8 tablespoons Gluten Free Rolled Oats
- 8 tablespoons almond flour
- 4 tablespoons almond butter
- 4 tablespoons pumpkin puree I used canned
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon cinnamon + another dash I love cinnamon
- 1/2 teaspoon vanilla extract
Instructions
- Pulse all ingredients in a food processor until loosely broken down.
- Be careful not to over process, they just need to be loosely broken down.
- Roll the batter into 6 large balls and place in the refrigerator 20 minutes to harden then eat.
- Store bites in the refrigerator up to 7 days or in the freezer up to 60 days.
Notes

- For a little sweetness, add a teaspoon of coconut sugar or a drop or two of liquid stevia.
