A grain free Peppermint Brownie Muffin filled with chocolate that melts in your mouth like a brownie. A healthy holiday treat that’s Vegan and Gluten Free!
Ready or not Christmas is coming next week. Did I really just say next week??? Seriously you guys. I need another week to get ready. I have two gifts bought and still have things to pick up then wrap. My Mom arrives one week from today. Eek! I better get my act together. I hate being last minute and I never am. I’m usually way more organized, but this entire year has been goofy so I’m just rolling with it and trying not to stress. It will all work out…somehow. I did some shopping online last weekend. Going to an actual store was derailed by massive amounts of rain being dumped on the desert. That’s a good thing because I can only take so much of being in a store this time of year. Last resort I will make a bunch of muffins and give them away as gifts. Haha…just kidding.
Up until two weeks ago, I didn’t know whether or not my family was gonna make out to AZ this year for the holidays. They’re always last minute. Every year we go through this. My Mom always ends up calling me freaking out over the cost of airline tickets or going back and forth on what to do. This year was worst. The Super Bowl is in AZ and the rental cars, etc. are crazy expensive. All I can say is this is what happens when you procrastinate. Now do you understand why I like to plan?
Speaking of planning, I’ve got the meals and deserts covered for the holiday. I know you’re surprised about this. Hopefully it will be enough to fill everyone up and keep them happy. Let me tell you this peppermint brownie muffin will surely turn any frown upside down. I don’t know what it is about peppermint, but this time of year I want to put it in everything. My muffins, coffee, pancakes, cookies. Anything I sneak it into. These muffin munchkins are by far my new favorite holiday treat. Not only are they grain free, they’re also dairy free, gluten free and vegan too. All made with healthy ingredients.
The key to making the texture of these like a brownie is the chocolate melting. Melting the chocolate the right way is critical to getting that melt in your mouth silkiness. A few years ago, I remember a friend put chocolate in the microwave for a fondue party. It was the worst tasting chocolate ever. The problem with the microwave is the sugars separate from the chocolate. It’s gross. Don’t do that. Chocolate is delicate and needs to be melted slowly. The right way to do that is take a pot, fill with water & bring to a boil. Once it’s boiling, reduce the heat to medium-low. Then place a glass bowl on top of the pot, place the chocolate inside and stir continously until all the chocolate melts. Remove from heat and add to your batter.
I may be making these and wrapping them up as gifts this year if I don’t get out of the kitchen and get shopping. I don’t know who wouldn’t want a brownie muffin wrapped under the tree as a gift? On second thought, wrapping these could become a little messy. So here’s another thought. Make ’em and keep them for yourself. I promise, you won’t want to give ’em away.
- Preheat oven 350 degrees
- Prepare a muffin tin with cooking spray (I don't recommend using liners, they will stick)
- Make flax egg by combining flax meal and water in a dish then set aside to thicken 5 minutes
- Melt chocolate in a glass dish setting on top of a pot of boiling water
- In a food processor add all ingredients & combine well - it will take a few minutes
- Transfer batter to muffin cavities
- Bake 13-15 minutes
- Remove from oven then top with peppermint chocolates as desired, they will melt as the muffins cool
- Allow to cool 5 minutes before serving
