I want to shout out a Happy Birthday to my best friend Sarah! I realized while writing this I haven’t seen her in year. Our birthdays are a few weeks apart and we always do something in between them to celebrate. Usually we don’t go an entire year without seeing each other though. What are we doing Sarah??? By the way, this picture was taken 8 or 9 years ago and pre my weight loss. We don’t have a more recent one together. Need to work on that.
Well, my weekend zipped by in a flash. I’m not sure where the time went or why I feel like I got nothing done. I was very tired this week. Maybe the new job, change in weather, increased workouts. I dunno. Friday & Saturday nights I slept 12 hours uninterrupted. I usually do sleep a lot, but 12 hours is not my normal. Not two days in a row and not without waking up 2 or 3 times. I saw my acupuncture doc again. He told me my energy levels showed very low and felt I may be fighting an infection (I never told him I was tired either). Quite a few people I know have had colds. Crossing my fingers I’m not getting sick.
I’m in love with acupuncture. It makes me feel relaxed and sleepy. It’s probably why I got nothing done this weekend. He also adjusted my back. My pelvis is still misaligned. I’m having trouble with the sciatic nerve pinching my lower back. When I do elliptical running, I lose feeling in both feet. It’s happening too on my commute to and from work. These days it’s taking me 60 minutes one–way. I can feel my lower back pinching in the car. I’ve always had some lower back discomfort, but not to this degree before injury. The logical explanation is wearing a boot 4 months. It caused my legs to be different lengths and must have put pressure on my lower back. After I saw him, I saw my sports therapist. He stretched me and also gave me back stretches. I already do back strengthening at the gym. These will be great to add to my stretching routine.
The weekend also felt like it zipped by because I baked like a zillion muffins.
I have to be honest with you guys. I have so many muffin recipes lined up right now that I could probably post a recipe every day from now until Christmas. I was thinking while baking this weekend that I should start rounding up my other recipes because I’m sure you guys don’t want to see muffins every day otherwise I’m gonna need to rename the blog The Muffin Lady. I’m doing my best to spread them out and not bombard you with them all at once. Sometimes people ask me. Is that recipe on your blog? No, not yet. Maybe in November or December!
What can I say? Sometimes I just get muffin inspired and just HAVE TO BAKE like this sweet treat I have for you today. A few weeks ago, I escaped the office for a green juice and popped into a specialty food market next door while I was waiting for my juice. I found so many cool things. Thankfully I was short on time and didn’t have a basket or I would have been there for hours and forgot my juice too.
I picked up a handful of things including this Louisburg Cider Mill peach butter I found in the jelly section. I had peach muffins on my recipe testing to-do list so when I saw this peach butter, I knew it had to come home with me. When I got back to the office and told a co-worker about my finds, she mentioned how much she loved peach butter and how popular it was on the east coast. I never even heard of peach butter until now.
Of course, I was on a mission to put my peach butter in a muffin. On the long commute home (which has been 60+minutes one way these days ugh…I really need to move or something), I remembered I had leftover cashew meal in the y pantry from the time I made these pancakes and coincidentally, I had bought cashew butter on sale the weekend before too. Crazy how things fall into place like that? I swear life is like a puzzle that randomly fits together. And that my friends, is how the peach cashew muffin came to be.
I met a girlfriend later that weekend for much needed retail therapy and brought her muffins to celebrate inspiring this recipe and for being my friend too. Because you should always bring friends muffins when you go shopping! The next day she texted me saying the whole family loved them and wanted the recipe. Here’s your recipe girl! <3
These muffins are sweet, but not too sweet. They’re creamy from the cashew, ginormous, gluten and dairy free. Oh and did I mention delicious too? These are great for breakfast over a cup of coffee or tea or healthy snack any time of day like when you’re shopping. I”m positive they would love to be made in your kitchen and given to a friend!
