Peach Almond Pistachio Bites

Happy Labor Day! Hope you are enjoying this extra long weekend and taking in the last bit of summer. Mom was scheduled to leave this weekend, but in true Mom fashion she decided at the last minute to stay a few weeks longer. I still have 6 more weeks on crutches. It would be impossible to do anything without her help. Doing anything on crutches is a thousand times harder.

You really take your hands for granted. I have no idea what I’d do without her or what I will do without her someday. These last weeks have been a roller coaster of emotions and there were (and still are) times I felt I would freak out at the world. She puts up with me and my crabbiness and I have no idea why. At least I make good food to make up for my cranky ways!

Peach Almond Pistachio Bites

With the departure of summer, I thought it was only appropriate to celebrate with a peach recipe and with one that can live on through winter. Honestly, I would have shared these sooner except I forgot the ingredients. Oops! As I typed that, I feel incredibly silly but it happens. Sometimes I get so excited when I’m in the kitchen creating new things that I neglect to write down the recipe or make notes on the one I’m using. Then I’m left to either wrack my brain for hours remembering it or having to re-create it. I can usually remember the recipe after a workout or find it in my phone.

I track all my meals with LoseIt app which has every recipe of mine with its ingredients. This particular recipe I didn’t have in my phone because Mom ate the bites before I got to eat them.

So in this case, I had to recreate a batch but I’m not complaining because they take only a few minutes to make and have just 5 ingredients. Simple. Healthy. Easy. It’s always a good sign when Mom likes something too. Happy cooking!

Peach Almond Pistachio Bites

Delicious Peach Almond Pistachio Bites! Made gluten free with no added sugar, these 5 ingredient bites make the perfect snack or breakfast on the go. Gluten Free + Vegan + Low Calorie

Peach Almond Pistachio Bites

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup peach butter
  • 1/2 cup Gluten Free Rolled Oats
  • 1/2 tsp cinnamon
  • 1/2 cup pistachios shelled, raw

Instructions

  1. In a blender, blend all ingredients together except the pistachios.

  2. Scoop the batter with a heaping tablespoon and roll into bite-sized balls. Place on a plate.

  3. Next place roughly chop the pistachios and place on a separate plate. Roll each bite over the pistachios pressing them firmly into the bites.

  4. Place the bites in the refrigerator in a container 30 minutes to firm.

  5. Bites will keep in the refrigerator up to 1 week.

    That’s great that you still have your mom’s help 🙂 as for recipes, they all hang out in my “notes” section for now but I might try a different app to organize them better. There are definitely times when I forget an ingredient and have to remake!

      I have an excel file with them, but often forget to update the ingredients as I’m making them. I’m thinking I need to do voice memos as I’m cooking.

    Happy Labor Day weekend to you too Megan! So happy to hear your mom is staying longer. As for my recipes, they are all over the place. Some on pinterest, some scribbled on notepads, others saved on Bloglovin. Jeez I should probably find a central place to safe them.

    Peach butter? mmmmmm need to get me some of that! I’m so glad that you have you mom with you. I know what it is like to be in a bind where you just feel helpless, and having someone like that, who you can rely completely on and who you know is there for all the right reasons just makes a world of difference.

I say that number one, because your Mom is a stud, number two because my Mom is a stud, and number three my kids have a built in butler, maid, servant and concierge service everyday of there lives.. little twerps.
