Hello hello from Denver! I flew in last night for FitBloggin’. I wasn’t planning on attending until a few weeks ago a friend reached out and told me I “really needed to come.” Friends are good. Yes? I had actually been on the fence about going for a few months. Last month I went to Blend and next month I’m going to IDEA. I didn’t know if I wanted to jam another weekend away in, but then I realized two things. Ok, maybe three. For one, FitBloggin’ is a whole lot closer this year than it was last year in Atlanta. Being an hour flight away was too close to pass up and a discount on the ticket too. 😉 Reason number two is next weekend is 4th of July and a 4 day weekend for me so I’ll be able to catch up. And number three is next year I probably won’t be able to attend any blogging event or have a life at all for that matter. My project goes live about this time next year. Work has already informed us that they are blacking out vacations for months. That probably means nothing to you, but just means I’m fitting in whatever I can whenever I can this year. What you can, when you can!
So guys, I looked at my editorial calendar the other day and realized I haven’t posted a single muffin recipe this month. Why didn’t you guys tell me? You must be feeling deprived! The horror! It’s the heat. I’m blaming the heat. I don’t want to turn on the oven for anything not even dinner which is why many crockpot dinners have been happening. Someone told me I could make muffins in a microwave oven. I haven’t tried it, but I am curious how that would work out. Now I just need a microwave oven. The only way was able to talk myself into baking was making something fruity with citrus in it. There’s just something light and refreshing about citrus. Yes? And these Orange Almond Muffins do not disappoint. In fact, they are my favorite muffins. Ok, so I have a lot of favorite muffins. They’re my favorite summer muffin! How’s that? - 2½ cups almond flour (or sub GF oat flour)
- 2 tsp baking powder
- 2 tbsp flaxmeal
- ½ cup stevia baking sugar or coconut sugar
- ½ cup unsweetened applesauce
- ¼ cup almond milk
- ¼ cup orange juice (I use Evolution)
- 2 tsp orange zest
- 1 tsp vanilla extract
- 1 tsp almond extract
- dash of sea salt
- Make flax eggs by combining flaxmeal with 4 tbsp water
- Place in refrigerator to set ~10 minutes
- Preheat oven to 350 degrees
- Prepare a muffin tin with nonstick cooking spray
- In a bowl, combine dry ingredients
- In another bowl, combine wet ingredients including flax eggs
- Add dry ingredient slowly to wet until combined well
- Fill muffin cavities with batter ¾ way full
- Bake 10-12 minutes or until a toothpick can be removed clean
- Cool muffins before removing from muffin pan
