Muffinlicious Muffins!

Published: May 25, 2015 · Modified: Jan 6, 2023 by Megan

Hi Muffins! Happy Memorial Day!

Hopefully you guys have the day off and getting some extra zzz's. Since today is a holiday remembering those who passed in service fighting for our country, I thought it would be fun to play on the whole remembering thing and honor some things near and dear to my heart like muffins. You guys know how much I love muffins. They've been a little scarce on SF these days as I've been expanding my cooking and baking horizons. I just love how versatile they are! You can create so many variations of them with healthy ingredients. I love sneaking fruit and veggies in mine. I also love how portable they are. I don't have to think about serving size or eating the whole batch because they're already pre-portioned for me.  I can freeze them for an anytime easy grab 'n' go snack or I can bring them to the office to share the muffin love. You just can't beat a homemade muffin packed with wholesome ingredients. Snackage couldn't get any better! But what I really love most about muffins, is just how darn cute they are. They're muffinlicious! Today I bring you all my favorite muffins. That is...that I've made so far!

I love muffins for many of the same reasons as you. I love the grab and go and that you can hide veggies in them (good for my family) Hope you enjoy this day off-- although bloggers never stop working, do we?

Oh my god these look so good!! I can't wait to try them when I get home. Currently in Italy and loving it, but just ran out of instant oatmeal and vegan protein powder which is saving me in the mornings from wheat and sugar overload...nooooooo!!!

Yup, muffins are awesome, and I think you need your own healthy muffin cookbook. You've basically written one already!

I've thought about a cookbook. A lot of people have been asking when I will have one. I need a lot more time to make that happen. One day I'll do it.
