I'm in Germany now, but before I left, I prepped a ton of food. I've traveled for years as a consultant all over the world and used to prepping meals and snacks before a trip. I know when I get home I'm gonna be dead tired recovering from jet lag and the long travel. The last thing I'll want to do is cook.
The first thing I'll wanna do is hit the trails then go back to bed. I mean a girl has to have her priorities! At some point I'll actually wanna eat though even if it is at 2am. The reality is I live alone so unless a magic fairy cooks and shops for me while I'm gone, I need to have a few things prepped in advance so I don't starve and live off almond butter. P.S. I've tried the fairy wish before. It never works. 🙁
So here's a look at what I prepped before I left the country to give you some travel prep inspiration!
Chocolate Almond Bites
I was going to make these bites, but I was out of one ingredient so I made these no bake chocolate almond bites instead. I'm so glad I did too. I haven't made them in forever. I forgot how delicious they are!
Almond Chia Hemp Flax Bars
These no bake bars blow my mind. They're packed with super food and flavor. I've yet to make any other bar like it. They're perfection. Can't wait to share the recipe with you!
Low Calorie Italian Casserole
A new creation with brown rice & turkey & my favorite veggie. I'll give you a hint it's my favorite veggie.
I pre-portioned the casserole in individual tupperware so they're grab 'n' go ready!
Spinach Sweet Potato Cakes
Freezer Egg Muffins
Sliced Zucchini & Strawberries
I bought fresh produce, cleaned, chopped & stored in the freezer for ease use when I get back.
Orange Almond Oat Muffins
This is new recipe. I love the citrus in them. Perfect and light for spring!
Flourless PB&J Apple Muffins, Blueberry Hemp Flax Muffins & Quinoa Chia Muffins
And just in case there isn't enough muffins, I always have these freezer remnants to fall back on!
It's entirely possible to meal prep before travel. With a little thought and coordination, it can happen! It makes it so much easier to stick to your health and fitness goals too when you do.

Hey Megan, do you usually travel on planes? How do you store the food so it doesn’t go bad between when take off and when you eventually get to put the food in a fridge?

Yep, was a consultant for many years traveled every week via plane. I carried foods that required refrigeration that I was going to eat on the plane, when I landed stocked up on perishables at a market.

I love prepping food for travel. A lot of the time I cannot find anything I want while on the road and usually not while flying so having food with me is a life savor!

I bring a ton of food with me on the plane from home. People always looks at me like I'm weird. A lot of people I think don't realize you can bring your own food. They assume you cannot like water.

Thankfully I've found really good food here. The first day I was worried, but I've been able to stick to healthy things I eat regularly. I'm very thankful for that.

I try to be. My life is busy. I'd never eat if I didn't plan ahead. I'm not sure if I had a family if I could be this organized.

I decided to treat myself and get a Blue Apron delivery when I get back from my trip to Europe! I also know I won't feel like shopping, but cooking is very therapeutic to me, so this is the best of both worlds. I know I won't get to cook much in Europe so I bet I'll be itching to get back in it. These are all really helpful tips and recipes and I'll have to try some out (especially the freezer egg muffins!)

So smart of you to prep and you will definitely thank yourself when you get back! I'm always a lunatic getting everyone packed that food prep is the last thing I'm thinking, but that also means I wind up dazed and confused in the grocery store as soon as we land, not so good!
