Happy day before Christmas Eve! Wow! It’s been a crazy couple days. I had no idea if and when who was coming. Dad flew in yesterday to join me for the holidays and Mom is well, still back in Wisconsin taking care of a family member. It’s a bummer for all, but we’re making the best of it. Truthfully, we can celebrate Christmas anytime so as long as everyone is safe and healthy is all that matters.
With all the uncertainty, I didn’t do much recipe planning unless you count the turkey in the freezer (I’m doing salmon one night, turkey another) so I’ll be winging it tomorrow. Good thing I have a lot of recipes to choose from and know a lot of food bloggers. 😉 The good news is Dad is here and he is responsible for carving the turkey because I would not be able to endure that trauma again.

These are my eats from Monday which was a busy day getting work finished and shopping for holiday meals. It’s also great motivation for me to eat balanced and create more delicious recipes!
Breakfast. Leftover Italian turkey kale egg bake.
Breakfast part two was crockpot cranberry super seed oatmeal. Holly yum! You will be getting this incredible recipe soon.
Lunch. Winter kale butternut squash salad with candied pecans. I can’t stop eating this salad. Trying to load up on my greens before the holiday feast this week.
Snack. Bowl of Greek yogurt with strawberries and almonds.
Dinner. Leftover cashew veggie kale chickpea soup. I have a love-hate relationship with soup. I like it hot, but I don’t like it so hot that it burns my tongue and I’m missing my taste buds for days. I can never seem to get it right.
