Freshen up the grill with this 30 minute Loaded Grilled Shrimp Salad that’s gluten free and just 300 calories!
Remember when I mentioned my new workout routine? Well, I guess new routines come with new “experiences.” I like to refer to this particular experience as my shower stalker. A few weeks ago, I did my swim workout then after headed to the shower. When I finished showering and opened the shower curtain to dry off, there was a woman standing in front of me.
As I was standing there naked wondering what the heck was going on, she asked me in broken English if “I was done.” I said yes. I looked around with what I’m sure was the most obvious you must be kidding me look on my face then said to her “but there’s 5 other showers available.”
Her response? “But this is the best one.” My eyeballs absolutely popped out of their sockets when I heard this. I’ve used every shower at my gym and they’re all exactly the same.
As I quickly dried off shaking my head in disbelief, she stood there watching me until I exited the shower. I walked away in disbelief. I just couldn’t believe someone would do that much less stand there and watch me in my nakedness.
Can we say uncomfortable? Now every time I’m about to leave the shower I peak out the curtain to make sure no one is stalking me. Just another example of what not to do at the gym. I think you will agree this warrants writing a part two to that.
I think you’ll also agree that this salad is the best and easiest thing ever. You know what I don’t understand? How restaurants never have a real, meaty salad and by meaty, I don’t mean more protein. I mean loaded with a variety of colorful vegetables.
Too many restaurant salads are packed with unhealthy ingredients (hello crispy chicken), loaded with cheese, seriously lacking in veggies and drowning in dressing. Salad has to be the easiest meal to toss together. I don’t get it. But this salad.
This salad has everything I love. Shrimp, avocado, tomato, cucumber and a new favorite, radishes. Until recently, I never had a radish in my life and now I’m not sure how I ever lived without them. I adore their spicy flavor. Enjoy!
Loaded Grilled Shrimp Salad
Freshen up the grill with this 30 minute Loaded Grilled Shrimp Salad that's gluten free and just 300 calories!
For the Salad
- 1/2 lb shrimp deveined with tail removed
- 4 cups mixed greens
- 1/4 cup lemon juice
- 1/2 cup radishes sliced
- 1 cup grape tomatoes sliced
- 2 cups cucumber sliced
- 1/2 cup avocado sliced
- salt and pepper to taste
In a small bowl, add ingredients for the dressing and place in the refrigerator to marinade.
Heat a grill at 350 F or grill pan on the stove to medium heat.
Clean the shrimp, pat dry with paper towels then place on a plate and drizzle with lemon juice and add salt and pepper.
Grill shrimp 2-3 minutes then flip and grill another 2-3 minutes until opaque. Remove from the grill and set aside.
Assemble the salad by combing the lettuce, tomatoes, cucumbers, avocado, radishes and shrimp in a large mixing bowl. Drizzle with the dressing than toss to combine. Enjoy!
For meal prepping, store the dressing and shrimp separate from the salad ingredients until ready to serve.
