How your Friday? Mine’s just peachy….:)
I realized recently I eat many of the same foods over and over again. I try a food, I like it and it becomes a regular in my meal rotation. For years, I traveled every weekly for work and didn’t have to think about planning meals. Now that I’ve been home this past year, I’ve been getting out of my bubble and trying new things like peaches.I never eat peaches. In fact, I forgot they existed until I ran smack into them at the market last weekend. Literally, I almost face planted into the bin.
I can’t remember the last time I ate a peach. It’s been a really long time. I know one reason I don’t eat them. Their hairy skin creeps me out. It’s weird, it’s gross and the pit is a major pain to remove too. Ok, so that’s two reasons I don’t eat peaches. I could go on to tell you about the hairy fruits I saw in China at the street markets, but I will spare you. Back to face planting…being the experimental health foodie I am I was curious. I had to have a peach, but there was no way I was peeling a hairy one. So I bought frozen peaches instead. No question what I had to do next. Make frozen yogurt!
It’s so hot in Arizona all I want to do is drink green juices and eat banana frozen yogurt all day. Those are well balanced meals, right?
This lemon peach frozen yogurt is so good. It’s sweet with a hint of sour and incredibly refreshing on a hot summer day. The star of this recipe is hands down the lemon. No skimping on the lemon! It won’t taste the same. This is my new obsession. I whipped a batch last weekend and stored it in the freezer in individual containers for the week. I can’t wait to dig in when I get home from work tonight. Peaches…where have you been all my life? I think a peach muffin may be in my future. You’re gonna love it!
- 1 cup frozen peaches
- ½ cup plain non-fat greek yogurt (I use Stoneyfield or
- 1 pack of stevia or other zero calorie sweetener
- 2-3 slices of lemon juice & lemon zest
- Add all ingredients to food processor
- Blend together well & serve

I am really into frozen yoghurt at the moment. It’s so healthy but you still feel like you are having a treat. This one sounds lovely – I love how easy it is to make just with frozen peach slices.
I never eat peaches & I am in love with this. Every night after dinner is just perfect.
