I have to tell you guys something. It seems I do a lot of interesting things at the gym. You know like use a piece of cardboard on my foot to do reverse lunges. Have you tried that? It’s killer! Or like tying two resistance bands around my legs and walking forward, backward and side to side. That one’s great for the hips and glutes! I also like doing reverse extensions grasping a small stability ball with my feet on a back extension machine to target my lower glutes which are always a weak spot for me. I also do a lot of timed circuit workouts to get my heart rate up and burn fat.
So these exercises may not see that weird or interesting to you, but I’m the only person at my gym doing them while everyone else is staring at me as if I’m doing a cirque du soleil show. What I’ve observed is people at the gym do one of two things. Either they hop on a cardio machine and peddle their little hearts out or they get on a weight machine and do the same movement they’ve been doing for the last 10 years. That is until now.
I recently began noticing people at the gym doing what I’ve been doing. The other day I looked over to see a woman doing reverse extensions with a stability ball and that same week two guys who always workout together very leisurely were upping their game doing circuits with weight and jumping ropes in between. Whether or not I was really the reason for them doing those things, I can’t tell you how happy it made me to see others challenging themselves and to think that maybe I was their inspiration for them doing so.
I hope my food inspires others too. To not only feed their bodies good food that’s healthy and nutritious but also to try something new. Just because you’re being healthy does mean giving up what you love. It just means finding new things you love and these citrus infused Lemon Cashew Cookies are to be loved. - 1 cup cashew butter
- ¼ cup maple syrup
- 1 tbsp fresh lemon juice
- ½ tbsp lemon extract
- pinch of sea salt if desired
- lemon zest for topping
- Preheat oven to 350 degrees
- In a food processor or using a hand mixer, combine all ingredients until silky smooth
- Using a ice cream scoop, drop cookie dough onto a nonstick cookie sheet
- Bake 12 minutes until the edges begin to brown
- Remove from the oven & allow to cool on the cookie sheet 10 minutes
- Enjoy or place in a container and refrigerate
