Hi Guys! It’s Friday! I love short work weeks because the weekend always gets here so fast. Come to mama! This week was especially short for me. I was off Tuesday for that MRI on my calves and yesterday I had to take off unexpectedly for a second round of MRI’s on my feet and ankles. I’m so glad it’s over with because sitting still for 2-3 hours at a time is almost impossible for me without a computer or iPhone to occupy me. More importantly, I hope to get answers about my legs.
In other news, Labor Day’s over in case you didn’t already know that which means summer is over, but I’m not ready to let go of it quite yet. It doesn’t feel like the end of summer in Arizona. It’s still over 100 degrees and it will not let up until the end of October. It will cool down a few degrees over the next few months, but we’re talking no more than 5 or 10 degrees. Anytime it’s over 100 outside 5 or 10 degrees doesn’t feel like a big cool off .
I love this time of year because it’s race time. I usually have 3 or 4 half marathons scheduled. Typically one a month through December. Now I have no idea when I will be hitting the pavement again. I have a tradition of doing a half marathon in Scottsdale every year. It’s on my birthday. Conveniently. People think I’m weird for doing it on my birthday, but for me it’s my way of reflecting on where I am in life and celebrating my accomplishments. I’m bummed to think this year I may not get to do it. I have until November and I’m crossing my fingers I still may have a chance to do it.
Since I can’t race, I will just make more delicious and healthy food. And because it’s the end of summer and still crazy hot too, a smoothie only seems appropriate. Remember the time I bought that cantaloupe? It inspired me to make another melon based smoothie. Since the last one was so delicious, I couldn’t resist.
I must admit, I never expected melons to make such delicious smoothies because when I think smoothie the first thing that comes to mind is berries, berries and more berries. Ok, maybe a banana too. 🙂 But am I right? I’m willing to bet the majority of us think berries when we think smoothies, but I’m here to tell ya it’s not true. If you’re one of those people who doesn’t like smoothies, try something out of the box like this delicious pineapple melon smoothie I have for you today.
It’s important to note this smoothie is laden with healthy vitamins, minerals and immunity boosting antioxidants from its pretty ingredients (in case you hadn’t noticed from the colors). If where you live, fall is in the air and it’s cooling off, it’s important to start thinking about give your immune system a boost before winter hits along with the flu and all those other nasty germs.
All you need are four simple ingredients. Carrots, pineapple, cantaloupe (any melon would be delicious in this) and a few hemp seeds. I added hemp seeds to mine for extra protein and immunity boost. Hemp is a superfood that provides a broad spectrum of health benefits, including: weight loss, increased and sustained energy, rapid recovery from disease or injury, lowered cholesterol and blood pressure, reduced inflammation, improvement in circulation and immune system as well as natural blood sugar control.
This healthy pineapple melon smoothie is the perfect balance of sweetness and I love the thick consistency. If you’re not a lover of carrots, have no fear. You don’t taste carrot in this. One note for you on the recipe, if you don’t have a juicer to make carrot juice then I recommend you buy store bought carrot juice. Be sure to check the ingredients first. It should only have carrots listed and no other added funkiness. Enjoy and have a great day!
