So today I’m escaping to Colorado. Boulder to be exact for Blend this weekend. Blend is a blogger-friend retreat and if you’re a blogger who’s not going my question is why aren’t you? It’s only the best blogging event ever. I’m over the moon excited to be going my second year in a row. I went last year for the first time and it was so much fun! At first, I felt intimidated meeting some of the faces I had seen regularly across the internet. I felt like I was meeting movie stars so many of them were my idols, but the ladies were all extremely nice and down to earth. One thing I’ve learned about bloggers is they are some of the nicest people you will ever meet. I’ve yet to meet a snarky one (fingers crossed). I connected with many inspirational and talented women, some of whom have become my close friends. Unfortunately a few like Lindsay, Becky and Ashley won’t be making it this year, but they will be with us in spirit and there’s always next year!
I’m really looking forward to getting away this weekend. Since I returned from Munich, I’ve felt worn down and tired. I’ve been fighting an infection and never fully caught up on sleep either. That’s probably why I dropped dead like a fish last week and got sick. I haven’t had a proper vacation in over a year and it’s definitely catching up with me. I know from all those doctor visits I have to manage my stress seriously to keep my hormones in check. I’m sure this weekend will be refreshing for the mind, body and soul. We’re staying in cabins with mountains and trails around us. You can be sure I’ll be finding my way to them! Sometimes you need to escape your everyday life even if it’s just for a few days. It can make the world of difference in your attitude and outlook. Although I won’t be disconnecting this weekend, in fact, it will be quite the opposite social media on steroids, it will still feel like a mini vacation just being away from home. I’m hoping it’s just what the doctor ordered to get me out of my funk.
Speaking of funk, I’ve been in a muffin funk lately. You may have noticed the lack of muffin recipes on SF last month. Something’s obviously not right in the universe if I don’t feel like baking them. You guys know how much I love making muffins. I’m trying to make up for it this month. My cooking is definitely influenced by the seasons. When it’s warmer, I crave lighter foods especially citrus induced ones. I am absolutely obsessed with lemons. Anyone who know me, knows I put an entire lemon in my water bottle everyday. For as many lemons as I use, I should really invest in a lemon tree. Lemons brighten and refresh. They just scream healthy in any recipe. This lemon cake is the perfect taste of health and it’s not to heavy. A perfect treat to enjoy during the warmer months or to bring to a party.
