Hi Guys! Happy Friday!
Today’s the day, I’m headed to Munich! As this post goes up, I’ll be getting in one last “good” workout before leaving for the airport and boarding a plane to Houston then Munich. You may think I’m crazy for working out before traveling, but hear me out. I’m about to sit on a plane for 18 hours with a bad leg that gets cranky if I’m not constantly moving and stretching. I don’t plan on working out much once I get there. Our hotel doesn’t have a gym, but our office has one which I’m not planning to go to until Monday. I’m sure I’ll be too jet lagged to wanna workout until then anyway. I plan on walking around a lot during the weekend to see the sights and stay awake. It’s not like I plan on being a slob cob-bob. I’m staying in the center of Munich just blocks from shopping and bakeries. I’m planning to pop into as many bakeries asI can for inspiration. I cannot wait. I have dreams that they’ll take me back and teach me all their tricks! Haha…one can always dream…
I can’t believe I’m headed to Europe today. It’s been years since I’ve been over the Atlantic. The last few years I’ve been to Asia a lot more than Europe. I decided to leave a day early so I could adjust to the time change and have another day to explore and wander around. Had I known earlier I would be going to Germany, I would’ve planned vacation time and flew somewhere like Greece, Spain or France.
It’s not like I haven’t been to Europe. I’ve actually been to most major cities. I studied in Spain for awhile and spent a month backpacking all over with friends. That was a really long time ago. I was a poor college student sleeping in hostels, eating bread from markets and drinking cheap wine from a box (you know the kind that gives you a headache but makes you think you’re cool). I always dreamed of going back one day to my favorite cities for a redeux when I had disposable income and was able to afford a real hotel, real meals and real shopping. I spent time in Austria and Slovakia for work six or seven years ago. Even then I was still broke from all the student loan debt and couldn’t afford much luxury. This time I plan on living it up as much as I can when not working. More than anything I hope the new environment refreshes and inspires me. I can’t wait to get back and tell you guys all about it! Next week I do have posts going up. I plan on checking in here and there, just not as much as usual. It really depends on the whole internet situation. So if you don’t hear from me, don’t worry. You will when I get back. Meanwhile whip yourself up a batch of these carrot cake bites. Then get fancy and dip ’em in greek yogurt. Trust me. They’re crazy delicious! xoxo

- 1 cup shredded carrots
- 6-8 dates
- ⅔ cup raw walnuts
- ⅔ cup unsweetened coconut flakes
- 1½ tbsp low sugar craisins
- dash of sea salt
- dash of nutmeg
- ¼ tsp cinnamon
- In a food processor or blender, shredded carrots. I pulse mine a few times until the carrots shred
- Remove carrots, then place in a several pieces of paper towel & squeeze any liquid out, you don't want them to be runny
- Places walnuts, dates, coconut, nutmeg, cinnamon & sea salt in blender and combine until a dough forms
- Remove & place in a mixing bowl
- Add carrots & craisins and combine with a spoon
- Roll dough into 16 balls
- Place in a container and refrigerate 1 hour
- Remove & enjoy
- Top with greek yogurt for extra skinnyfitaliciousness
These freeze nicely up to a month
