Ginger Citrus Carrot Juice {GF, Low Cal, Vegan}

Happy Friday Friendly Faces! Good thing I love to cook because I’ve had ZERO time to do it these last few weeks. Even muffins have been a void in my oven. Cooking easy has been my survival. No matter how busy I am though, I always make eating healthy a priority. Steam veggies, baked fish, veggies burgers, Easy Eggs Muffins, crock-pot meals and instant oatmeal are always my go-to meals when life gets crazy.

I have a tendency to put eating on the back burner when I’m stressed and busy. Not eating for long periods of time makes me hangry and suddenly I’m overeating like a squirrel stashing nuts for the winter. Since I started juicing, I’ve been able to avoid the overeating cycle. I can pack multiple nutrients and vitamins into a single drink and feel full for hours.

Lucky for me and you I refuse to eat ugly food even if I am busy. Because beautiful food just makes you feel good from the inside out. Hello…ginger citrus carrot juice. Carrots are one of those vegetables I think are taken for granted. They’re a powerhouse of nutrients and vitamins and while they are so accessible somehow they are forgotten. I must admit to you when I bought a bag of carrots at the market making a juice was the last thing on my mind. Actually, I was planning to make Carrot Fries but ran out of time.

I was about to make a green juice when it occurred to me why not a carrot juice? So a little bit of this…a little bit of that and a wonderfully vibrant juice was what I had.

At first, I was skeptical how carrots would taste as a juice and I was completely amazed at how good it was. The ginger adds a bit of spice which is a nice offset to the sweetness of the citrus and sour lemon. I added lemon to mine with the peel on to add an even more vibrant flavor. Lemons are a staple in nearly all my drinks. This juice is simple, delicious and filling. Enjoy!

  • ¾ pound peeled & cleaned carrots
  • 1 lemon
  • 1 orange, peeled
  • 1 inch piece of ginger

    Haha I love what you said about eating pretty food. That’s hilarious!
    My grandma scared me when I was young. Every time we came over she wanted us to drink carrot juice because it would make our eyes stronger and our hair redder haha.

    I love carrot juice! I definitely have to try this. Is it strange that I crave carrots on a daily basis? True story. I love them roasted with crushed red pepper or raw with hummus.
