People always ask how I lost 80 pounds and how I’ve kept the weight off for so many years. Ditch The Diet is a cumulation of lessons from my weight loss journey. Now let’s see some food because it is Wednesday after all! If you’re new to Skinny Fitalicious, What I Ate Wednesday is a post I do every week showcasing my meals from one day. Breakfast. Egg white spinach omelette and Mom’s gingerbread pancakes with blackberries. Holly crap those gingerbread pancakes are good! Mom’s been holding out on me. #comingsoon
Lunch. Kale butternut squash salad with candied pecans. We’re not even going to talk about the baking snafu I made here. Let’s just say I was baking cookies and forgot to turn down the oven. #bakingfailures
Snack. Greek yogurt with strawberries and candied spiced pecans and pepitas. I was going through recipe drafts the other day and found this candied spiced nuts recipe that I forgot to post. Oops! Recipe will be up Friday! #imsorry
Dinner. Cashew kale veggie chickpea soup. It was freezing in Phoenix this weekend. That means it was 50’s. All I wanted was hot, steamy soup and this was everything I dreamed of. #hitsthespot
