Peppermint Brownie Muffins

Preheat oven 350 degrees Prepare a muffin tin with cooking spray (I don't recommend using liners, they will stick) Make flax egg by combining flax meal and water in a dish then set aside to thicken 5 minutes Melt chocolate in a glass dish setting on top of a pot of boiling water In a food processor add all ingredients & combine well - it will take a few minutes Transfer batter to muffin cavities Bake 13-15 minutes Remove from oven then top with peppermint chocolates as desired, they will melt as the muffins cool Allow to cool 5 minutes before serving Serves 6, 135 calories each w/o optional topping
