A grain free Peppermint Brownie Muffin filled with chocolate that melts in your mouth like a brownie. A healthy holiday treat that's Vegan and Gluten Free!

  1. Preheat oven 350 degrees
  2. Prepare a muffin tin with cooking spray (I don't recommend using liners, they will stick)
  3. Make flax egg by combining flax meal and water in a dish then set aside to thicken 5 minutes
  4. Melt chocolate in a glass dish setting on top of a pot of boiling water
  5. In a food processor add all ingredients & combine well - it will take a few minutes
  6. Transfer batter to muffin cavities
  7. Bake 13-15 minutes
  8. Remove from oven then top with peppermint chocolates as desired, they will melt as the muffins cool
  9. Allow to cool 5 minutes before serving
