Cashew Pancakes

  • 1 egg white
  • 1 tbsp chia seeds
  • 1 tsp baking powder
  • ¼ tsp table salt
  • ½ tsp almond extract (or vanilla)
  • 1 cup cashew meal
  • ¼ cup cashew milk (or substitute your milk of choice)
  • ⅛ cup plain non-fat greek yogurt
  1. Combine all ingredients well in a mixing bowl
  2. Prepare a skillet with cooking spray
  3. Place on stove top and heat to medium heat
  4. Ladle batter onto skillet to form pancakes ~2-3 large spoonfuls
  5. Cook 5 minutes until sides begin to setup
  6. Flip pancakes & cook another 3-5 minutes until brown
