Homemade Salsa

- 1 28 oz can organic diced tomatoes
- 2 jalapeno peppers, chopped
- 4 garlic cloves, minced
- 1 medium onion, chopped
- 1 bunch of cilantro leaves, chopped roughly
- Juice of 1 lime
- Salt to taste
- Wash, prep and chop vegetables
- Heat a large pot on stove top to medium-low heat
- Add 1 tbsp extra virgin olive oil and add onion, jalapeno & garlic
- Cook until vegetables are tender
- Add tomatoes and bring to a boil
- Simmer on low for 15 minutes
- Add lime, salt & cilantro
- Refrigerate in a container 4-5 hours prior to serving
