Sweet Potato Mexican Mash
Serves: 4
For Crockpot
  • 2 sweet potatoes, sliced into 1 inch pieces
  • 1 15 oz can no salt added black beans, drained
  • 4 ounces lean turkey breast
  • 2 small zucchini, sliced into 1 inch pieces
  • 2 tbsp cumin
  • 1 tsp cayenne pepper
  • 1 tsp mexican hot pepper
  • 1 tbsp garlic powder
  • 1 tbsp oregano
For Assembly
  • 1 Green Bell Pepper & 1 Red Bell Pepper
  • Mixed Greens
  • Salsa
  1. In a crockpot, add all crockpot ingredients
  2. Set crockpot to low and cook 2-3 hours or until sweet potatoes become mashed
  3. Then 30 minutes prior to finishing, preheat oven to 350 degrees
  4. Prepare a baking sheet
  5. Wash and clean bell peppers
  6. Slice bell peppers in half
  7. Add bell peppers to baking sheet and cover with foil
  8. Bake in oven 20 minutes and remove foil
  9. Assemble a plate of mixed greens
  10. Add baked bell pepper
  11. Fill bell pepper with sweet potato mexican mash
  12. Top with your favorite salsa
