Ginger Spiced Candied Pecans & Pepitas
  • 2 egg whites
  • 1 cup pepitas (pumpkin seeds)
  • 1 cup pecans
  • ¼ cup Truvia baking sugar
  • ½ tsp ginger
  • ¼ tsp nutmeg
  • ½ tsp black pepper
  • 1 tsp sea salt
  1. Preheat oven 250 degrees
  2. Prepare a baking sheet with a slip mat or parchment paper
  3. In a large bowl, whip eggs whites until frothy
  4. To the egg whites, add pepitas & pecans & stir to coat
  5. In a separate bowl, add sugar, ginger, nutmeg, salt & pepper
  6. Stir to combine spices
  7. Sprinkle the spice mixture over the nuts to combine well
  8. Spread the nuts evenly onto the baking sheet
  9. Bake 45 minutes until fragrant
  10. Remove from the oven & cool 1 hour on the baking sheet to harden
  11. Remove from the baking sheet & store in an air tight container in the refrigerator
