Tomato Balsamic Watermelon Salad

Serves: 4
- 2 large beefsteak tomatoes cut into quarters
- 4 cups cubed & seeded watermelon
- 1 tbsp chopped mint leaves
- 4 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil
- sea salt to taste
- In a small bowl, combine mint, oil & vinegar
- In a larger bowl, add watermelon & tomatoes
- Add dressing to salad
- Allow to marinade in the refrigerator 1 hour prior to serving
Serves ~4, 86 calories each
