Orange Almond Muffins

Serves: 12
- 2½ cups almond flour (or sub GF oat flour)
- 2 tsp baking powder
- 2 tbsp flaxmeal
- ½ cup stevia baking sugar or coconut sugar
- ½ cup unsweetened applesauce
- ¼ cup almond milk
- ¼ cup orange juice (I use Evolution)
- 2 tsp orange zest
- 1 tsp vanilla extract
- 1 tsp almond extract
- dash of sea salt
- Make flax eggs by combining flaxmeal with 4 tbsp water
- Place in refrigerator to set ~10 minutes
- Preheat oven to 350 degrees
- Prepare a muffin tin with nonstick cooking spray
- In a bowl, combine dry ingredients
- In another bowl, combine wet ingredients including flax eggs
- Add dry ingredient slowly to wet until combined well
- Fill muffin cavities with batter ¾ way full
- Bake 10-12 minutes or until a toothpick can be removed clean
- Cool muffins before removing from muffin pan
Makes 12 muffins, 170 calories each
