Orange Almond Muffins

A vegan & gluten free muffin with the taste of summer. This citrus packed orange muffin is delicious, light and bright. A delicious summertime snack!

Ingredients
  • 2½ cups almond flour (or sub GF oat flour)
  • 2 tsp baking powder
  • 2 tbsp flaxmeal
  • ½ cup stevia baking sugar or coconut sugar
  • ½ cup unsweetened applesauce
  • ¼ cup almond milk
  • ¼ cup orange juice (I use Evolution)
  • 2 tsp orange zest
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • dash of sea salt
Instructions
  1. Make flax eggs by combining flaxmeal with 4 tbsp water
  2. Place in refrigerator to set ~10 minutes
  3. Preheat oven to 350 degrees
  4. Prepare a muffin tin with nonstick cooking spray
  5. In a bowl, combine dry ingredients
  6. In another bowl, combine wet ingredients including flax eggs
  7. Add dry ingredient slowly to wet until combined well
  8. Fill muffin cavities with batter ¾ way full
  9. Bake 10-12 minutes or until a toothpick can be removed clean
  10. Cool muffins before removing from muffin pan

Makes 12 muffins, 170 calories each
