Creamy Cashew Vegetable Kale Soup

A creamy cashew winter soup swimming in a rainbow of vegetables, kale and spice. This ultimate bowl of health is so creamy and delicious you'll never believe it's vegetarian or good for you.

Ingredients
  • ¾ cup raw unslated cashews, soaked
  • 6 cups vegetable broth (or chicken if not vegetarian)
  • 1 tbsp extra virgin olive oil
  • 1 white onion, diced
  • 2 stalks celery, chopped
  • 3 carrots, peeled and chopped
  • 1 red bell pepper, chopped
  • 1½ cups pre-cut butternut squash (frozen works too)
  • 2 cups kale (pre-washed & de-stemmed)
  • 1 28 oz can diced tomatoes
  • 1 15 oz can chickpeas
  • 2 bay leaves
2 tbsp Oh She Glows Homemade 10-Spice Blend (I only used 9, omitted the white pepper)
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon onion powder
  • 1 tablespoon dried basil
  • 2 teaspoons dried thyme
  • 1½ teaspoons freshly ground black pepper
  • 1½ teaspoons fine grain sea salt
  • 1 teaspoon cayenne pepper
Instructions
  1. In a small bowl, cover the cashews with water & soak for at least 4-8 hours - I soaked mine overnight
  2. After soaking, drain water from cashew bowl then add cashews to blender with 1 cup of broth
  3. Blend until a creamy mixture appears & set aside
  4. Heat a large pot on the stove over high heat & add extra-virgin olive oil
  5. To the pot, add carrots, red pepper, butternut squash, celery, canned diced tomatoes, cashew cream, remaining 5 cups broth & all spice blend
  6. Bring to a boil then reduce to medium heat
  7. Add bay leaves, sea salt & pepper
  8. Allow the soup to simmer 20-25 minutes stirring occasionally
  9. Add kale & chickpeas during the last 5 minutes
  10. Once the kale has wilted, the soup is ready
  11. Add salt/pepper as needed
  12. Remove bay leaves
  13. Serve & enjoy!
  14. Additional note - this soup freezes beautifully!
