Thanks to all of you for your sweet birthday wishes yesterday! They meant the world to me! I wish I could say I did something fabulous and over the top to celebrate my birthday, but that’s not really me. I’m kind of an old lady. My life is hectic all week long. My idea of celebrating is relaxing and pampering myself which is exactly what I did. I also treated myself to some things, but I will save those goodies for tomorrow.

My birthday was also the marking of my one year blogiversary. It amazes me how fast things happened in just one year like the 2,800 Facebook followers I suddenly have. That’s crazy! I track my stats monthly. I’m working on getting a media kit together and when I saw that number last week I just about tumbled out of my chair. While I’m grateful for the numbers, the most important thing to me from this blog has been how many connections I’ve made with readers and other bloggers. This was the most unexpected and most rewarding thing I’ve gained from this experience.

One of my wishes for my birthday was to feel better and be free of this injury. While technically injury free, I’ve had several post injury things I’ve been dealing with since the summer- calf strain, back and nerve problems, ankle swelling, tendinitis pain, plantar fasciitis, etc. I see a nerve specialist in two weeks then have a nerve test scheduled in December. I hope this goes away before then and this is all just post injury pains.

This weekend my ankle felt much better. I was even able to take my workouts outdoors. Ditching the gym and being able to enjoy the much cooler Phoenix outdoors was a big treat. It almost didn’t happen. Friday afternoon I spoke to a triage nurse after driving home from work and having terrible pain from my ankle swelling like a scary monster on the drive. It always seems to happen at night sleeping, in the afternoon or after sitting too long. The nurse told me to take Alleve instead of Ibuprofen. As soon as I took it, the swelling went down immediately. My ankle feels a thousand times better. A little sore, but the swelling is definitely causing the pain. I’m not sure what’s different about Alleve vs Ibuprofen. I haven’t had a chance to look into yet, but I wish someone would’ve told me that weeks ago. All I know is I’m glad to be pain free. For now anyway.

My other birthday wish is to have a fairy whip me up another batch of these Almond Cranberry Bites. I made these a few weeks ago and my office testers went crazy for these. They asked me “how did you make a ball taste exactly like a Larabar?” I’ve never tried a Larabar so I can’t say whether or not they do taste like one. But according to my handy dandy office testers they do. I thought they tasted like a ball of candy. But if that’s what a Larabar tastes like, then I’ve been missing out big time!

Vegan Almond Cranberry Bites

Cranberry Almond Bites are loaded with wholesome ingredients and plenty of sweetness. A healthy, low-calorie treat, the ultimate fall goodie! Paleo + Vegan + Gluten Free + Low Calorie

Ingredients

  • 1 cup almonds sliced
  • 1/2 cup almond flour
  • 3/4 cup dried cranberries
  • 3/4 cup dates pitted
  • 4 tbsp almond butter
  • 1 tsp almond extract

Instructions

  1. Add cranberries and dates to food processor. Process on high until a paste forms.
  2. Add remaining ingredients then pulse a few times until combined. Wet hands with water to shape into 1" balls. Refrigerate 30 minutes to harden then enjoy.

    Your co-worker is indeed a genius. I will only ever take Aleve! I’ve found it works 10x better then ibuprofen & even tylenol.

    Megan, I am surprised no one mentioned this & I know the post is nearly a year old but did you realize that in the nutritional information it says the calories per serving is 2103 calories! Also, the total fat listed in the nutritional information says 127 g! Which would make them neither low calorie nor low fat. Was this a mistake in calculation? Should the nutritional value information be divided by 18 servings? They look & sound awesome and I would like to try them if the nutritional information is incorrect. They look like they’d be wonderful for a holiday potluck as well. Would you please confirm the nutritional value information? Thank you

      Of course they don’t have 127 grams of fat. That would be absurd. The calories are 127 each. I transitioned to a new recipe card last month which was supposed to calculate nutritional information automatically but did not and I do not have time to update them due to my upcoming hip replacement surgery. That is why no one mentioned it when the post was published.
