Last week I was in Chicago for sponsored travel and as luck would have it, one of my best friends from college lives a few miles from the client so I spent the weekend visiting her and her family. Her husband and I were also friends in high school. It’s always fun when we get together and it never feels like time has passed either.
Usually we see each other every year, but with my medical problems the past two years sort of slipped by. We enjoyed early morning walks at the lake, a movie, activities with the kids, lots of talking, good food and a lot of wine!
It was nice to get some down time away and to not be working, blogging or doing school work. I’ve got so much going on right now, I feel like I’m working all the time. I needed the downtime and felt more refreshed when I got home. So this week’s eats of course, showcases what I ate last weekend in Chicagoland!

Breakfast. Sausage frittata and cantaloupe. My friend’s husband made it while we were out walking. I called it “Nate’s magnificent frittata” because it was amazing. Definitely need to recreate this!
Lunch. After the kids softball games, we went out for lunch at Potbelly. Trying to eat gluten free turned out to be a big challenge throughout the trip. The only thing I could find on the menu was a Mediterranean Salad. The salad was meh. It wasn’t fresh and the chicken tasted fake like a lunch-able so I picked most of it off. I guess you can’t win them all.
Snack. Thankfully we had loads of cookies to eat. I brought coconut quinoa cookies from home and the kiddos loved them. They kept reminding me to email the recipe when I got home which I still need to do.
Dinner. Was girls night out at a wine bar. We shared pizza with asparagus, goat cheese, zucchini, red peppers, summer squash and it was gluten free! We also had copious glasses of Pinot Noir. It was everything!
