It’s muffin Monday! Not sure if anyone noticed I was MIA from Instagram this weekend. Friday I had hip surgery which went well, but took a lot out of me. I spent much of the weekend resting and learning to walk again. Going through this was a humbling experience and like I mentioned in last week’s post has made me feel a little less than human.
The good news is the rickety hip pain I’ve been living with for 18 years is gone. Now it’s just a matter of my femur fusing to the implant which means lots of walking and you know how much I love to walk! But it does take a lot out of me so if I’m slow to respond comments these next few weeks, please forgive me!
Now, let’s get on with better or should I say more delicious things like MUFFINS because I have a feeling that’s why you’re really here today. 🙂
You may remember my fond love of apple cider vinegar for helping with my digestion issues last year. If not, go back and read that post because apple cider vinegar is something everyone can benefit from. In fact, I have another post scheduled next week that goes into more detail about how to drink apple cider vinegar so stay tuned for that!
Now I realize not everyone can stomach apple cider vinegar with water so that’s where these Blueberry Apple Cider Vinegar Muffins come to the rescue! By the way, if you haven’t baked with apple cider vinegar before, you really must give it a try. It’s like a mini science experiment in the kitchen when you combine eggs with apple cider vinegar. Fun for the kids for sure!
Not to worry about the taste either. You don’t even taste the apple cider vinegar in these muffins so you get all the vitamins and minerals of apple cider vinegar without the bitter taste and in the form of a thick and chewy blueberry muffin!
But what’s really wonderful about these Blueberry Apple Cider Vinegar Muffins is they’re only made sugar free with only 6-ingredients. YES! This is definitely one of those instances where less is more. The blueberries and apple cider vinegar give them a sweet and savory blend of flavors that doesn’t require adding sugar.
Real whole food, minimal ingredients, takes less than 30 minutes to make and you get a boost of minerals and vitamins?!? I’d say these Blueberry Apple Cider Vinegar Muffins are a win! Now, who’s hungry?

Blueberry Apple Cider Vinegar Muffins
Blueberry Apple Cider Vinegar Muffins made gluten free with just 6-ingredients. A hearty yet, soft & moist low calorie breakfast or snack!

Ingredients
- 6 large egg whites
- 4 tsp apple cider vinegar raw, unfiltered
- 2 tbsp honey
- 2 cups Gluten Free oat flour
- 1 tsp baking soda
- 1/2 cup blueberries
Instructions
- Preheat oven to 350 F. Prepare a muffin tin with muffin liners or cooking spray.
- In a medium bowl, whisk together vigorously egg whites with honey and apple cider vinegar until frothy.
- In a separate bowl, sift together flour and baking soda.
- Slowly add the dry ingredients to the wet ingredients and fold them together to combine.
- Add the batter to muffin liners, dividing it evenly amongst 6 muffin liners.
- Bake at 350 F for 15 minutes.
- Remove from the oven and cool in the muffin tin 5 minutes before removing & eating.

How many blueberries should be included? Also, is there another flour that you could recommend as a substitute for this recipe? All the best with your recovery.
The amount of blueberries is in the recipe. As for the flour, I used oat flour. I haven’t tried others, but I suspect most should work.

So glad to hear that everything went well with your surgery!! I can’t wait for that post on ACV, it’s certainly something that I’ve done on and off when my digestion hasn’t felt 100%. Right now I’m just doing lemon water in the morning but I think ACV might need to be added back in again.
