Last week was a short work week for me, yet a busy one! Between work deadlines, blog, fitness and doctors’ appointments I had no time to shop & prep meals. I actually missed it. As you guys know, I love to cook just a little. That’s how life is sometimes. You have to adjust your routine to get through it all. Check out my quick meals from the week.

As you can see, many of my meals were soups. I love making soup & freezing for weeks then when I don’t have time shop and cook. I pre-portion everything so I can easily grab from the freezer, heat & eat. Being busy doesn’t have to mean sacrificing delicious and healthy meals. Shopping is half the work and there are many times I wish I had someone to run my errands for me. That’s why I love meal delivery services like Blue Apron.
Blue Apron is a meal delivery service that sends you pre-portioned, farm-fresh ingredients right to your doorstep. The food is packed in a refrigerated box so everything is fresh and waiting for you when you get home.
You can’t beat that for convenience! Shopping is half the battle and Blue Apron takes care of that for you. For someone busy like me, this comes in handy! Since everything’s pre-portioned, there’s no food to be wasted either. Blue Apron recipes are chef-designed. They have a large selection of recipes and add new dishes to their menu weekly.
Blue Apron offers two meal plans, a 2-Person and a Family-Plan. The Family-Plan is made for a family of four. With the Family-Plan, you can receive one or two deliveries each week (you pick). Each delivery consistence of two meals. For each meal, you get four full portions or you can feed more if you’re a family with three or four younger children eating smaller portions.
The price for the Family-Plan is $8.74 per meal, or $69.92 per eight serving delivery. Shipping is always free. With the 2-Person plan, you get one delivery per week with 3 meals. The 2-Person is perfect for me being single so I can have leftovers for my busy weeks. Blue Apron is available nationwide and ships to over 80% of the country.
One of the meals I made from Blue Apron was this Bouillabaisse-Style Fish Stew. Let me tell you guys. This stew was delicious. It stole my heart. It was my favorite meal by far and I’m so excited to share it with you. All the meals come with a handy dandy recipe card for you to reference when making the recipe.
The front of the card states clearly all the ingredients you’ll need. The food you receive is labeled clearly so it’s very easy. The recipe card also tells you the number of portions, calories and cooking time. Most Blue Apron recipes average 40 minutes to prepare and are between 500-700 calories. I will tell you. The portions were larger than I expected. This stew yielded 3 big bowls.
The back of the card takes you step-by-step through the recipe from preparing the produce to cooking to plating. It has pictures and detailed instructions for you to follow along the way. It’s dummy proof so if you’re not comfortable in the kitchen, you’ll convince everyone you’re a real chef with this!
The first step for making the bouillabaisse was chopping all the produce. Since everything was pre-portioned this went quick for me. The instructions for preparing the meal were extremely detailed so if slicing and dicing isn’t you’re thing, you’ll have no problem with this. All the produce was incredibly fresh.
After preparing the ingredients, it was time to cook. Then it was time to cook. First thing was to cook the potatoes, fennel, onion and garlic with the spices. Blue Apron sends you a small bag with the spices pre-measured. The only things I added from my pantry were extra virgin olive oil, salt & pepper. Once the potatoes were softened I added crushed tomatoes, kale, tangerine juice, olives & 3 cups of water. After cooking a few minutes, I finished the stew by added the cod fillets that came with the delivery. As the cod cooked, I broke it apart with a fork into smaller pieces.
While the stew mingled and cod was finishing, I put the sliced baguette into the oven for a few minutes to toast. The instructions were to add a little extra virgin olive oil, salt, pepper & rub with a garlic clove. It was so easy and garlic on a baguette is delish!
Last I plated my meal. The instructions tell you exactly how to do it so if you’re not fancy (like me) then Blue Apron’s got you covered. I must admit I felt like a real chef making this meal. I can’t believe how incredibly easy it was and the stew turned out delicious! I can’t wait to make it again. I’ve already been eyeing up new recipes I’d like to try like Pan-Roasted Salmon with Spicy Miso Broth & Wakame and Kale and Butternut Squash Lasgna. You guys know I can’t say no to butternut squash.

I have heard lots about Blue Apron, but this is the first time I’ve seen what their instructions look like! I love that it’s all done with pictures. How many times do my bf and I stand in the kitchen going, do you think it’s done? Is this what it’s supposed to look like? LOL!
