A traditional deviled egg made over with healthier ingredients that’s low in calories!
I’m so glad it’s morning. Last night I was spooked and didn’t sleep a wink. I came home from work, turned on the TV and as I was putting things away I noticed basketball was on. I never watch that channel much less basketball. Worst sport to watch ever. I watch two channels, Bravo and E! aka The Kardashians and The Housewives of the latest city. Obviously I’m really into TV so you should invite me to your next trivia game especially if the theme is Housewives of Bravo or The Kardashians because I know everything about those people. I’m a reality TV junkie and a calorie counter and proud of it!
Needless to say, the TV thing scared the crap out of me. I immediately opened all the closets then checked the windows and doors. My last home in Tucson was broken into and although I do have a security system I still get really paranoid about it. The thought of someone being in my home just makes me feel yucky. Like someone’s violated my privacy. Well really they have invaded it. It’s eerie to think someone’s been through your stuff and seen pictures of you. The person who broke into your house could be standing next to you at the store and you would never even know it.
After inspecting the entire house up and down, I never found any reason why the TV channel was on basketball. Even so, I didn’t sleep. I was too spooked. I’m convinced my house is haunted which is the craziest notion because it’s a brand new house. Can a new house be haunted? I say yes! I have woken up in the middle of the night to some of the strangest things. Like the time I shot out of bed at 2 am because the ceiling fan light in the hall was turned on. I never turn that light on and I never have lights on when I go to bed. I can’t with lights on. Even the smallest shadow of one will keep me from snoozing. Then there’s the toilet flushing itself in the middle of the night. The one in my bedroom just decides to flush in the middle of the night. Maybe it gets stuck? I have problems with the second floor bathrooms which is a mystery in and of itself. The other more recent spookiness going on are smoke clouds flashing in front of me at night when I’m watching TV at night. At first I thought it was my MAC. It broke in December, but I’ve looked it over and I didn’t see or feel anything overheating.
Now you guys think I’m weird or paranoid. Likely it’s later. I will always have my Tucson home robbery in the back of my mind. Hopefully the smoking ghost will leave me at peace this weekend as I cook up a storm and pack for my trip to Europe. I have no clue what I’m gonna wear.
Now for this delicious recipe! It’s Easter weekend so I wanted to give you something healthy yet traditional to make and deviled eggs fit the bill. I’ve always hated deviled eggs. It’s the mayo. I can’t stand mayo. I’ve never actually eaten mayo that I know of and there’s no way I ever will. The smell is the grossest thing ever. Even looking at it turns my stomach upside down. Mayo’s pure bad fat (i.e. high cholesterol) so you’ll never see me near it anyway. But I DO love me some eggs. When I was brainstorming Easter menu ideas, I landed on avocado deviled eggs. OMG..these were crazy delish. Let me know if you give them a whirl. Enjoy your weekend!

- 12 dozen eggs
- 1 medium avocado
- Sea salt
- optional: paprika, salsa
- Boil 1 dozen eggs in a large pot
- Bring pot to boil and reduce heat to medium low for 10 minutes
- Drain water, allow eggs to cool 30 minutes
- Peel the shells
- Carefully slice eggs in half & remove yolks
- In a blender, mix 1 medium avocado with sea salt until blended smooth
- Place egg halves on a dish, scoop one tbsp of avocado mixture into the egg captivity
- Add paprika or salsa for added fun & flavor
