Let’s just get one thing straight. I am not a fan of cereal. Once I started paying attention to food labels and reading the nutrition and ingredients, I got so turned off by the high fructose corn syrup, add sugar and artificial flavorings and everything else snuck in them I eventually gave up trying to find a good one.
It’s scary to think I grew up eating that and believing it was the healthiest thing I could put in my body. Do people still think that? OMG…is that how kids are growing up? More importantly, do YOU think that? Okay, wait. I’m getting ahead of myself. I can’t solve world cereal problems with one blog post.
In any case, I’ve been investigating cereals recently for new recipes I’ve got in the working. Yes, I’m that creepy woman going through every box of cereal in the aisle. Weeding out the good ones from the mound of bad ones. Stores must love me.
I’ll have you know I have found a handful of good ones. Right now I’m crushing on One Degree Sprouted Brown Rice Cereal and it’s actually the one I used to make these D-E-licious Almond Apple Flax Bites. But I also like Love Grown Foods and PLAIN Gluten Free Rice Chex (only plain, not the other flavors). By the way, this post isn’t sponsored. I’m just sharing what I love with you.
Now that apple season has officially arrived, I whipped up an easy no bake snack with my new found cereal that’s sure to win you over. Almond Apple Flax Bites made in the blender with 4-ingredients – almond butter, rice cereal, flax seeds and unsweetened apple butter.
Chewy, crunchy and with a hint of sweetness, these bites have the perfect snack-like consistency. I blended the brown rice cereal with almond butter and apple butter, rolled the dough into balls then rolled them over flax seeds to give the bites extra fiber and omega-3’s. Then I store them in the fridge for an easy on-the-go snack.
I bought the cereal and flax seeds at Thrive Market. I get all my flours, maple syrups, teas, etc. there. I’ve done a lot of comparison shopping this year (on a student budget here) and they are usually a $1-2 cheaper than my stores. It’s been a big money saver for me!

Almond Apple Flax Bites

Ingredients
- 1/2 cup unsweetened apple butter
- 1/2 cup almond butter creamy*
- 1 1/2 cups cereal I used One Degree Vegan Sprouted Brown Rice
- 1/4 cup golden flaxseeds
Instructions
- Add cereal to a food processor or blender and pulse until fine like a flour. Then add apple butter and almond butter and process until smooth.
- Place flaxseeds on a plate. Roll batter into 17 bites, roll over the flaxseeds then roll in your hands pressing them firmly into the balls.
- Place finished bites on parchment paper on a plate in the freezer 1 hour to set.
- Keep bites in the freezer up to a month to enjoy!

Awesome! I love how quick and easy these are. Can’t beat that short ingredient list. I know they taste good because everything in them is delicious! I need to look for that cereal, too. It’s so hard to find healthy options in that aisle!
I saw it at Target the other day which made me really happy because it can be somewhat hard to find. Whole Foods and Sprouts has it by me.
