Happy Friday or should say Happy Cookie Friday?
Are you guys excited for the weekend? I am!
I need this weekend so desperately to get my head on straight and organize my life. My house is a disaster and the blog always has its never ending list of to do’s. I’m also meeting with friends this weekend and loads of recipes I plan on whipping up. For me, cooking IS fun and is the runner up to fitness when it comes to ranking my hobbies.
So everyone needs a cookie to kickoff a long weekend, right? That’s my excuse anyway and the fact that they’re healthy is just icing on the cake.
In honor of it being cookie Friday, I have a healthy chocolate chip cookie recipe to celebrate the Labor Day weekend. Who doesn’t love chocolate chip cookies? I do! I don’t love all the calories and fat though. My eyebrows raise when I see a a cookie labeled “healthy” and the ingredients are packed with butter, oil and sugar. Unlike my Dad’s favorite chocolate chip cookies, these are heart healthy and waist friendly.
Whether you’re trying to lose weight, be healthy or both, I’m a firm believer that you never have to give up what you love or feel deprived.
The best part about these cookies is how simple they are to make. With my crazy schedule, I’m all about keeping things simple and saving time. Is it just me or does it always seem like baking cookies is a long process? Mix the solids, mix the liquids then combine. For these goodies, all you have to do is toss the ingredients in a food processor and bake.
All you need are 4 ingredients, a food processor and an oven. I’m also willing to bet you have many, if not all, the ingredients for these cookies in your pantry. If not, you should consider keeping them on handing because you just may not be able to stop eating these!
These may sound #strangebutgood after all, these cookies are grain-free, gluten-free and dairy-free. That’s a lot of free for a lot of flavor. One tip I have for you is to flatten the dough on the baking sheet with your hand before baking. Since they are grain and dairy-free, they will not expand and flatten on their own like traditional cookies. Enjoy and have a great long weekend!
