WIAW…My Lunch in the Sun

Happy Hump Day Friends!  It’s time for another What I Ate Wednesday and I’m linking up with Peas & Crayons.

                                                                   

Since my Mom returned to Wisconsin earlier this month, I’ve been sticking close to home on the weekends as I’m recovering from my my foot injury.  Last weekend I was feeling much better and decided to venture out and treat myself to lunch out.  I’d been running errands and appointments all day since my morning workout. 

I didn’t plan on eating out that day, but I was starving and not close to home.  Instead of eating something I would regret later I decided to stop and eat at my favorite healthy eating place Pita Jungle.  I sat on the patio and enjoyed a warm sunny afternoon lunch.  It was a treat!  Before my injury, I ate out at once every weekend.  Eating out last weekend reminded me of my life before injury.  It was nice to feel normal again.  :)

Breakfast – My standard coffee, oatmeal with blueberries and raspberries, two eggs whites topped with sriracha hot sauce.

And a little side of roasted cauliflower for fun.  Yes, I eat veggies for breakfast.  You have to sneak them in wherever you can!  I’m really digging cauliflower lately.  It’s delicious roasted.  I roasted this at 375 for 18 minutes with a little extra virgin olive oil, pepper and garlic powder.

Lunch – I treated myself at my favorite healthy eating locale Pita Jungle.   I had the chicken shawarma lavosh wrap – grilled chicken, tomatoes, onions, garlic sauce with a greek salad, dressing on the side.

Their homemade green tea.  It’s amazing and huge!

Dinner - Black bean burger on a bed of romaine with mustard and side of roasted asparagus and zuchini.

Snack – Apple with my all time favorite NuttZo.  It has nothing but 7 nuts (no peanuts in this one), no added oils or sugars.  It’s just nuts.  It’s the pricest nut butter I’ve ever seen, but worth every last penny!
