Here’s a look at my grocery cart last week. Just a few essentials to get me through the week. Spices, salmon, lettuce, apples, cucumber, greek yogurt, carrots, eggs, lettuce, black beans, blueberries, tea, nuts, squash, rick cakes and probably a few items I can’t remember. It was a lot! I was out of many things I keep on hand at home.
At the market, I spotted this hazelnut flour and had to buy it. It was pricey, but so worth it! I made mint hazelnut muffins last weekend for my work team.
We’re having a several all day meetings this week and I like to bring HEALTHY & FUN snacks. Like this bag of apples…..they were buy 1, get one free and there is no way I could eat all these apples before they go bad. An apple a day does a body good especially for weight management. Do you eat one?
It helps when you feed people on long meeting days. They don’t fall asleep and that way I don’t eat all these treats myself. Another weight-loss trick peeps!
Now for the food….
My beloved morning joe @ Starbucks was an epic fail. The coffee was awful! It was hot, but burnt. I returned it for a fresh brew and even it was bad, but I didn’t want to return a second one. Seriously?!? How does bad coffee happen and at Starbucks? Starbucks…you did not make me happy. I believe a cup of coffee sets the tone for my day. Does this mean more bad weird things are about to happen? At least they gave me this free coffee card for my next coffee.
Breakfast – Chocolate zucchini pancakes topped with fresh strawberries. This was my first attempt at a healthy version of a pancake. I don’t love pancakes, but I’m sure some of my readers do. Truly I have not eaten them in years. They’re “empty” food to me. Meaning – they don’t fill me up and I feel hungry no matter how many I eat. These were tasty with the chocolate & the zucchini made them very moist. I can’t say I’m convinced to make more pancakes though. I will get the recipe up for your guys in a post soon in case you guys are interested.
After morning workout snack – roasted, unsalted nuts. I try to eat protein right after I workout otherwise I will head to the pantry and eat junk or sugar.
Lunch – Since I didn’t get eggs for breakfast, I made them for lunch. Egg whites with shaved brussels sprouts & mushrooms seasoned with fresh cracked pepper, oregano & garlic powder. Yum! If I were on a deserted island, I would want eggs with me. And sun screen too…
And a side of greek yogurt & fresh blueberries sprinkled with Acai powder. Also had an apple, cucumbers & raw cauliflower not pictured because I couldn’t make them pretty.

Dinner – Grilled Salmon with Lemons, wild rice and roasted vegetables – medley of cauliflower, brussels sprouts, carrots & zucchini.
Desert – a mint chocolate hazelnut muffin.
Peppermint tea before bed….it’s calms my stomach. Did you know mint tea assists with digestion? I can attest it helps!
