No Bake Raspberry Almond Granola Bars

Morning Friends!  How’s Tuesday treating you?   I have another treat to share with you today, but first I want to tell a few things.  First, how excited I was last week that my Avocado Hummus and 25 Ways to Eat Hummus was featured by Flour Me with Love.  Check it out if you didn’t see my tweet via Twitter or Facebook.  If you’re not following me on social media, you should.  You will catch all of my updates and messages I post throughout the day. Second, I treated myself to new workout gear and shoes.  This supports those new goals I talked about yesterday.  I found these on clearance at Sports Authority.  I hate it when that happens!  Some of my workout tanks needed to be tossed so it was good timing.  Move over pink, orange and yellow are my new spring fashion collection.

Let’s talk granola bars.  Granola bars became a staple in my diet when I started losing weight.  My favorite brands are Luna, Nature Valley and Kashi.  Generally, I stay away from the protein bars because a) too much fat & calories and b) too many ingredients I can’t pronounce.  My rule of thumb is if I can’t pronounce the ingredients or there are way too many ingredients then I don’t need to be eating it.  I feel there are too many preservatives in foods already and my body doesn’t need the weird genetically modified junk too.  I eat Luna or Cliff protein bars when I’m racing or traveling and need something quick and on the go.  Otherwise all natural is where this girl tries to be.  Since I have not been traveling for work the last (almost now) year, I’ve had more time to make homemade things at home.  Yesterday I made my first version of a granola bar – raspberry almond.  These were deli-sh, no DIVINE.  The mixture of almond butter combined with the sweetness of the raspberries was exquisite.  I just want to skip dinner and eat them all.  Did I mention they’re good?  These require no baking – just mix the ingredients, freeze then cut into bars.  Why buy genetically modified preservative food-thing when you can make these in a matter of minutes?  I would have been making these a long time ago had I known it was this easy.  My Mom keeps telling me I need to write a book or sell my low-calorie creations.  I’m pretty sure Pinterest has this area covered.   Hope you love these!

Raspberry Almond Bars

  1. 1/2 cup almond butter
  2. 1/4 cup honey
  3. 1 cup instant rolled oats
  4. 1/4 cup flaxseed
  5. 1/2 cup raspberries
  6. Sprinkle of sliced almonds
  1. Toss all ingredients in a microwave safe bowl
  2. Microwave for ~1 minute or until peanut butter and honey have melted slightly
  3. Mix ingredients well
  4. Spread mixture into a (5×9 inch) loaf pan and press flat
  5. Place in freezer for 2-3 hours
  6. Remove from freezer and cut into bars
  7. Using wax paper or parchment paper wrap into separate bars, place in a plastic air-tight container in the refrigerator or freezer
  1. 150 calories per bar
