Butternut Squash Cranberry Salad & Orange Cinnamon Dressing

Serves: 3
- 2-3 cups cubed butternut squash
- Cinnamon
- Salt & pepper
- EVOO (extra virgin olive oil)
- Lettuce
- Craisins
- juice of 1 fresh orange
- 2 tbsp EVOO (extra virgin olive oil)
- 1 tbsp maple syrup, no sugar added
- Preheat oven to 400 degrees
- Place cut butternut squash on a prepared baking sheet
- Spray with nonstick cooking spray
- Sprinkle well with cinnamon and salt/pepper to your desire
- Roast squash 35-40 minutes in the oven until very tender
- While squash is roasting, mix ingredients for the dressing together in a mason jar or bowl and refrigerate until ready to eat
- Assemble the salad by placing butternut squash on plate of lettuce, add craisins & dressing
