Blueberry Banana Oat Muffins

- 2 ripe bananas mashed
- 4 egg large egg whites
- 2 tbsp light honey
- 2 tbsp applesauce, unsweetened
- 1 tsp vanilla extract
- 2 cups rolled oats
- 2 tbsp whole wheat flour
- 1 tbsp chia seeds
- ⅓ cup almond milk
- ½ cup blueberries
- Preheat oven to 350
- Prepare a muffin pan with cooking spray
- Mix together in a small bowl egg whites, honey, applesauce, vanilla & almond milk
- Mix together in another bowl flour, chia seeds & mashed bananas
- Add wet ingredients to dry
- Add oats & blueberries and stir well
- Add mixture to muffin pan, about 2 spoonfulls
- Cook for 20 minutes & cool on a baking rack
