Peanut Butter Pumpkin Oat Bars

- ½ cup peanut butter
- 2 tsp pumpkin spice
- ⅓ cup honey
- 1 tsp vanilla extract
- ½ tsp baking soda
- ½ cup pumpkin puree
- 2 eggs
- ⅛ cup rolled oats
- Preheat oven to 350 and prepare an 8″ x 8″ pan
- Combine all of the ingredients in a bowl (except oats) and mix well until a smooth batter forms
- Pour mixture into the pan, sprinkle oats on the top and bake at 350 F for 20 minutes
- Allow to completely cool and set before serving
