Peanut Butter Pumpkin Oat Bars

Ingredients
  • ½ cup peanut butter
  • 2 tsp pumpkin spice
  • ⅓ cup honey
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ cup pumpkin puree
  • 2 eggs
  • ⅛ cup rolled oats
Instructions
  1. Preheat oven to 350 and prepare an 8″ x 8″ pan
  2. Combine all of the ingredients in a bowl (except oats) and mix well until a smooth batter forms
  3. Pour mixture into the pan, sprinkle oats on the top and bake at 350 F for 20 minutes
  4. Allow to completely cool and set before serving
