Oh hey, friends! It’s time for a new edition I’m starting called This Is Life. I’ve been feeling a little blah about blogging lately and that usually means it’s time for a change. I’ve been wanting to add more personal happenings here. Honestly, I don’t feel like my life is that exciting but I’ve been getting more requests for day in the life posts so here ya go, a recap of life last Saturday!
20 Minute Baked Pesto Salmon. Steamed in foil packs, this Paleo, low calorie, gluten free meal is a healthy twist on a dinner favorite! Gluten Free + Low Calorie + Paleo
Fast. Easy. Healthy 20 minute dinners! That’s my jam during the week. I may work from home, but I’m still too busy to play Martha Stewart every night. Between school, freelancing, running this website and coaching clients, life is busy and now I’m sharing that time with a guy too.
Last week I made this 20 Minute Baked Pesto Salmon dinner. Everything bakes together in foil packs. I love using them because it steams to food to perfection. My favorite way to eat salmon!
A few weeks ago, I did a video on why eating a healthy breakfast is important. I talk a lot about this with my one-on-one clients as many of them skimp on breakfast saying they don’t have enough time in the morning. If you watch the video you’ll discover it’s one of the best times of day to eat. With the right planning and meal prepping strategy, breakfast can be easy and delicious! Here’s 15 Healthy Make Ahead Breakfasts to make breakfast a reality on those busy mornings.
Vegan Chocolate Chip Chickpea Blondies! Sink your teeth into these good for you, decadent, gooey, protein packed, chocolatey treats. Vegan + Gluten Free + Low Calorie
Last week I spent half my days deleting food pictures. Way too many food pictures. When you’re a food photographer, you end up with a random assortment of food pics. Sometimes a food looks amazing in the moment then later I look at a picture of lettuce and think to myself, really? What was thinking I was gonna do with this?
What’s even more troublesome, I have issues hitting the delete button. Like maybe, just maybe one day I’ll need that random picture of lettuce. Can we say obsessed? But we’re not here to talk lettuce. We’re here to talk blondies!
As in, Chocolate Chip Chickpea Blondies! Chewy, gooey, decadent, nutty blondies, oozing with chocolate that melt in your mouth. Hungry yet? Oh you wait!
Hey Friends! Hope you’re having a wonderful weekend! It’s been in the 90’s in Phoenix this week. Seriously, weather is crazy.
This week I blasted through lots of work stuff so I could spend the week having fun instead of being buried under homework. Friday hung out with the boy. Spent most of yesterday with Kelli laughing, drinking, movie watching and catching up. I need more days hanging out with her.
Today I’m teaching spin, running errands and making food for the week. Speaking of which, here’s your meal prep inspiration for the day:
Some good reads this week. Hope you enjoy this edition of the Sunday Skinny!
One day I started walking and that one day changed my whole life. This is how I lost 80 pounds walking.
The Beginning of a New Life
My 80 pound weight loss didn’t begin with a diet. It began with a walk. In fact, weight loss wasn’t even a thought in my mind. At that time in my life, I was feeling particularly unhappy and insecure working as a consultant in California unsure of my future, unhappy that I’d sacrificed so much of my personal life to corporate America. One night after a particularly stressful day, a coworker suggested I go to the beach to think.
When I arrived, I saw a path on the strand where people were walking and running. I hadn’t been active in over decade due to my avascular necrosis, but something pulled me toward that path. A voice inside me said “you should walk.” So that’s what I did. That night as I walked, I realized for once I didn’t feel strangled by life. I could breathe. I could just be.
After my walk, I looked back at the ocean and thought to myself “I’m going to walk here every night.” And that’s what I did. Every night from that day forward, I walked. The first week 10 minutes, the next month 20 minutes the month after 30 minutes, then 40, 60, 90 and eventually I was walking 8-9 miles.
Crockpot Veggie Omelet! Make breakfast easy by letting the slow cooker do the work! This simple make ahead breakfast is loaded with vegetable & protein. The perfect way to start the day. Paleo + Gluten Free + Low Calorie!
Dating someone who doesn’t have the best eating habits is a huge reminder of how far I’ve come with my own eating. The other day the guy told me he eats Fruit Loops for breakfast and a snack at night. OMG. I died. Chemicals + sugar = FAKE FOOD GROSSNESS.
Then he asked if JIF was a good peanut butter. Died again! I told him that was where I drew the line. He’s not allowed to see me if he keeps eating JIF. Kidding. I didn’t say that, but when he asked for healthier recommendations I more than happily obliged. We’ll see how that works out. #GodHelpMe
Sometimes I wish I didn’t know the things I know about food and was just one of those people who could blissfully eat anything unaware of what’s in food and how bad it is for you. I suppose that’s the benefit of losing 80 pounds and becoming a nutritionist, or is it a consequence? Whew. Big question for another day!
Today I’m sharing 3 Things You Need For Healthy Weight Loss, three very important things! Before I share them, here’s why they’re important.
Last week I shared this video on the watch out’s on calorie counting with apps. Many of my one-on-one clients use apps to calculate calories and I spend a lot of time educating them the dangers of using apps to calculate calories for weight loss.
