Almond Butter Granola Shake + Weekend Stuff

Morning Friends!  Hope your week is off to a great start.  My weekend went too quick.  You know it…too much to do and not enough time!  This foot injury has slowed me down and now that Mom returned to Wisconsin I’m adjusting to life on my own.  I got very little sleep this weekend.  One night due to a crazy huge storm that roared through Arizona.  The wind & rain was so loud I thought the roof of my house was going to blow off.  Ok, so I’m not Dorothy!  The next night a smoke alarm battery demanded changing at 2am.  Why do those happen in the middle of the night?  Ugh….it’s gonna be a long week.

Besides limited sleep, I scored serious calorie burn this weekend with my workouts.  I tried walking on the treadmill yesterday and after 5 minutes my foot wasn’t having it.  So I stuck to my usual routine spin class, weight training, stairmaster & swimming. 

I also treated myself to a long overdue pedicure for the sake of my physical therapist and I guess for mine too.  

With the storm and cooler weather this weekend, soup was in order.  I made Chicken Lentil Soup in the slow cooker.  I love this soup.  It has a delicious flavor and it made the house smell amazing.  It was perfect on a cold, stormy day!

So now for the good stuff.  As you know, I’ve been obsessed with making smoothies since I made my first one, Berry Banana Mango Smoothie a few weeks ago.  My Mom saw a peanut butter smoothie on a restaurant menu and kept talking it.  Since it was National Peanut Butter day Saturday, I celebrated by making an Almond Butter Granola Shake.  This is thick and creamy.  I topped mine with granola and blueberries then ate it with a spoon.  Delicious!

Then I made it again the next day!  It was perfect after my morning workout and swimming this weekend!   Note this one is heavier on the calories due to the almond butter and granola so I recommend you eat this as a meal replacement.  I had mine with a salad for lunch.

Almond Butter Granola Smoothie

Ingredients
  1. 1/4 cup almond milk
  2. 1 ripe or frozen banana
  3. 1/8 tbsp honey
  4. 2 tbsp almond butter
  5. Top with Granola
Instructions
  1. Place all ingredients in blender & blend until smooth
  2. Pour in a glass & sprinkle with granola
  3. Enjoy with a spoon!

  1. 150 calories per serving - does not include granola or additional toppings

    I have never though to add granola to a smoothie. What a fabulous idea. I need to do this, although at 150 calories a serving, I’ll have to drink three of them if it’s a meal replacement. I’m no fun hungry.
    Target is crazy; it gets me every time. At least you got a Kitchen Aid Mixer out of the deal though. What an awesome score.
